🥘 Immunity-Boosting Recipe for Allergy Season
Here's a delicious and nutritious recipe designed to support your immune system during allergy season:
🍚 🍣 Turmeric Ginger Salmon Bowl with Citrus Quinoa
Ingredients:
- 2 wild-caught salmon fillets (6 oz each)
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 cups baby spinach
- 1 avocado, sliced
- 1/4 cup raw pumpkin seeds
- Fresh herbs (cilantro, parsley) for garnish
- Salt and pepper to taste
Instructions:
1. Cook quinoa in vegetable broth according to package directions, adding half the lemon juice, half the orange juice, and half the zest when the quinoa is nearly done. Fluff with a fork when finished.
2. Meanwhile, mix turmeric, ginger, garlic, remaining citrus juices and zests, and olive oil in a small bowl to create a marinade.
3. Brush the salmon fillets with the marinade and let sit for 10 minutes.
4. Preheat oven to 400°F. Place salmon on a parchment-lined baking sheet and bake for 12-15 minutes until just cooked through.
5. Assemble bowls with quinoa as the base, topped with spinach, salmon, avocado slices, and pumpkin seeds. Garnish with fresh herbs.
