Here is one of our very own recipes using the Collina de Mela Olive Oil:
Orange/Lemon Olive Oil Cake
1 ¼ C Cake flour¼ t Salt1 t Baking PowderMix or sift well in a small bowl.3 Eggs¾ C Sugar3 T Orange and lemon zest mixed In a large bowl, beat eggs, sugar and zest on high speed until eggs thicken and turn light colored.1 ½ t Pure vanilla1 C Extra virgin olive oilAdd vanilla to egg mixture. On medium speed, slowly add oil down sides of the bowl.Add the flour mixture on low speed just until mixed. Pour batter into prepared pan. Prepare pan with1 T olive oil and 1 T granulated sugar to coat.Use a 9” X 2” baking pan.Bake in a preheated oven, mid rack at 350° until golden (25-30 min.). Turn out while still a bit warm.Serve with whipped cream, fruit glaze or fresh fruit. Enjoy!
