Recipe:
● In a bowl, whisk (or blend) 12 eggs with a splash of milk, a pinch of salt, and pepper to taste.
● Pour the egg mixture into a lined half sheet pan, then sprinkle your choice of chopped veggies on top.
● On a separate lined sheet pan, arrange vegan breakfast sausages.
● Place both sheet pans in a preheated oven at 350˚F. Bake for approximately 17 minutes, or until the eggs are fully set.
● Remove the pans from the oven and allow them to cool.
● Using a mug, cut out 12 rounds from the cooked eggs to fit onto English muffins.
● Assemble each sandwich by placing an egg round, a sausage patty, and a slice of cheese between the two halves of the English muffin.
● Wrap each sandwich in parchment paper and enjoy!
For immediate consumption:
● Heat the sandwiches at 350˚F for about 6 minutes, or until the cheese is fully melted.
