Autumn salad with sweet potato and figs🍁

For the salad:
- 1-2 sweet potatoes:
- Figs
- 1 handful of almonds
- 1 handful of pumpkin seeds
- Extra: blackberries and goat cheese

For the dressing:
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp mustard
- 1tbsp fresh thyme
- 1 tsp maple syrup
- Salt, pepper
- Paprika

Directions:

Sweet potatoes🍠
1. Wash the sweet potatoes and cut into slices (approx. 1⁄2 cm).
2. Brush with a mixture of olive oil, paprika, salt and pepper.
3. Preheat a griddle pan, add a little more olive oil and sauté the sweet potatoes until lightly browned on both sides.
4. You can also add some fresh thyme to the pan for extra flavor.
5. Remove the potatoes from the pan and set aside.

Almonds and pumpkin seeds🌰

1. Keep the pan hot and add a little more olive oil once again.
2. Add the almonds, pumpkin seeds, salt and pepper. Toast until slightly brown.

Dressing🥗

1. Combine all ingredients in a glass and shake well.
2. Arrange the salad with the figs, roasted almonds, pumpkin seeds and sweet potatoes in a bowl. Add a little blackberries and crumbled goat cheese if you like. Top and serve with the dressing.
