1 lb cooked or canned salmon (drained)โ€‰โ€‰โ€‰
1 ยฝ cups mashed sweet potato โ€‰โ€‰โ€‰
ยผ cup breadcrumbs or pankoโ€‰โ€‰โ€‰
1 eggโ€‰โ€‰โ€‰
2 green onions, slicedโ€‰โ€‰โ€‰
1 tsp Dijon mustardโ€‰โ€‰โ€‰
Salt, pepper, and Old Bay to tasteโ€‰โ€‰โ€‰
Olive oil for pan-searingโ€‰โ€‰โ€‰

If using salmon filet, simply boil until fully cooked throughโ€‰โ€‰โ€‰
In a large bowl, mix salmon, mashed sweet potato, breadcrumbs, egg, green onion, mustard, and seasonings.โ€‰โ€‰โ€‰
Form into cakes
Heat olive oil in a skillet over medium heat.โ€‰โ€‰โ€‰
Sear cakes 3โ€“4 minutes per side until golden and crisp.โ€‰โ€‰โ€‰
