FUNCTIONAL FUEL: ALMOND SESAME TAHINI COOKIES
All you need is:
1½ cups almond flour
½ teaspoon baking soda
½ cup honey (or preferred liquid sweetener like monk fruit syrup/stevia blend)
½ cup tahini
¼ teaspoon flaked sea salt
1 teaspoon vanilla extract
½ cup sesame seeds

Recipe:
ALMOND SESAME TAHINI COOKIES
Ingredients:
* 1½ cups almond flour
* ½ tsp baking soda
* ½ cup honey (OR ½ cup monk fruit syrup/liquid stevia equivalent)
* ½ cup tahini
* ¼ tsp flaked sea salt
* 1 tsp vanilla extract
* ½ cup sesame seeds
Instructions (Summary):
* Preheat oven 350°F (175°C). Line baking sheet.
* Whisk dry ingredients (flour, soda, salt).
* Combine wet (sweetener, tahini, vanilla).
* Mix wet into dry to form dough.
* Roll dough into balls, coat in sesame seeds, flatten.
* Bake 10-12 mins until golden.
* Cool & enjoy!

(No Sugar Added, Gut-Friendly & Protein-Packed!)

As a functional medicine dietitian, I love creating treats that taste good *and* do good for your body. This creamy mango "nice" cream is rich in probiotics, protein, and natural sweetness – no guilt, just goodness!

✨ **Ingredients** (Yields 2–3 servings):

* 2 cups frozen mango chunks
* 1 cup full-fat cottage cheese (with live cultures)
* 1/4 tsp vanilla extract (optional)
* Pinch of sea salt (optional)
* 1–2 tbsp unsweetened almond milk/water (if needed)
* 2 tbsp chopped pistachios for garnish

🌀 **Instructions:**

1. Blend mango, cottage cheese, vanilla & salt in a high-speed blender.
2. Use a tamper or small splash of almond milk to help it blend.
3. Blend until thick & creamy like soft-serve.
4. Enjoy immediately or freeze 2–3 hrs for a scoopable texture.
5. Top with pistachios and dig in!
