Masoor Dal Tadka (Red Lentil Dahl)

INGREDIENTS

1 1/2 cups (300 g) dry red lentils
1 large (200 g) carrot finely diced (*see recipe notes)
1 small bell pepper
1 large onion chopped
4 cloves of garlic minced
1 heaped tbsp fresh ginger minced
1/2 tbsp vegetable oil
3 cups (720 ml) vegetable broth or water
1 cup (240 ml) canned coconut milk (*see recipe notes)
1 1/2 tsp ground cumin
1 tbsp curry powder
1/2 tbsp sweetener of choice
1 tsp ground turmeric
1 tsp paprika
Sea salt and black pepper to taste
1/3 tsp red pepper flakes optional
INSTRUCTIONS

Rinse lentils under running water. Chop the onion, garlic, ginger, bell pepper, and carrot.
Heat oil in a pot and sauté onion for about 3-4 minutes over medium heat. Add ginger, garlic, carrot, and bell pepper.
Add all spices, sweetener, the lentils and 3 cups of vegetable broth or water. Bring to a boil and let simmer for about 10 minutes.
Finally, add coconut milk and cook for a further 5 minutes or until the desired thickness of the dahl is reached.
Season with black pepper and salt. Taste and adjust the seasonings as needed.
Serve warm with basmati rice, potatoes, or naan (flatbread) and garnish with fresh herbs.
NOTES
You can also use sweet potato or pumpkin instead of carrot.
It's possible to use any plant-based cream (like soy cream, oat cream, etc) instead of canned coconut milk. You could also use plant-based milk (e.g. almond milk, cashew milk, etc.) for a low-fat/low-calorie version. In my opinion, this dal tastes best with coconut milk.

Latin Style Lentil Soup

1/2 yellow onion, diced
2 medium carrots, sliced into coins
3 stalks celery, diced
2 red potatoes, cubed
6 cloves garlic, minced
1 inch ginger, grated
1 15oz can fire roasted tomatoes
1 tsp sazón
1/2 tsp adobo seasoning
1 cup green lentils
1/3 cup red lentils
6 cups vegetable broth
4 sprigs thyme
1 tsp dry oregano
1 bay leaf

In a large pot over medium heat, add 2 tsp olive oil, onions, carrots and celery. Sauté until onions are softened. Add in potatoes and again stir to combine. Stir in garlic and ginger, and continue to sauté until fragrant. Add in tomatoes, adobo and sazón and stir well. Add in remaining ingredients, stir and raise up heat to bring to a boil. Once at a boil, reduce to a simmer and cover with a lid. Continue to simmer lentils for another 30 minutes or until lentils are fully cooked. Remove sprigs and bay leaves then serve.

Hi everyone! It has been a while since I have posted anything, but I have great news and some sad news.

Sad news is that I will be closing my doors August 31st. I know it is sudden with very little notification, but things have moved at such a fast pace that I didn't know it was going to happen.

The decision was made because I have been fighting to have my dad relocated to live with me and to be a primary caregiver to him. Having the business open and working for a chiropractor left me little time to spend with the man that gave me life.

The good news is that I may get my father once all the necessary have been put in place.

I hope to reopen again. I wish everyone a safe and healthy life.
