Happy Black History Month! I often reflect on our history how it has impacted my life, what is my contribution, and give thanks for my family members and ancestors who came before us to help shape the identity, society and rich culture we get to be apart of.
One of my contributions is through food. I created a recipe in honor of my Caribbean heritage for Black History month savoring the flavors I grew up eating curry, ginger, hot pepper, Bay leaf and spices. Food has an enormous influence on our history and culture.
I not only want to honor my heritage with my recipes but also preserve our legacies by sharing the benefits of nutrient rich whole Plant Foods.
To steward our health with what we put on our plate and into our bodies is a celebration of Black History and protects generations to come.

Ingredients:
1 TBLS avocado or olive oil
2 cups dried brown or green lentils
1 small yellow onion fine diced
3 med-sized carrots peeled and cut into ½ inch cubes
2 large russet potatoes peeled and cut into ½ cubes
1 TBLS minced ginger
2 large cloves of garlic minced
3 sprigs of fresh time stripped and chopped
2 TBLS curry powder
1 tsp paprika
1 tsp Garam Masala
1 large bay leaf
¼ cup Plant Bomb Caribbean Peppa Sauce
1 scotch bonnet or habanero pepper (Optional for spice lovers)
6 cups Vegetable stock
1 15oz can of Coconut milk
1 bunch of Rainbow Chard or other leafy green( kale) washed, destemmed, and rough chopped
Salt and Pepper to taste
