To continue from yesterday's post, we thought we'd share a delicious, clean, summer recipe! This Black Bean and Mango salsa is delicious paired with chicken or fish...or, with just a spoon, lol!
1 ripe mango diced
2 cans black beans
1 avocado diced
1 small red onion diced
2 pints cherry tomatoes (red and/or yellow)
1 jalapeƱo finely diced
Juice of 1 lime
1/2 bundle cilantro
Cumin to taste.
1 clove garlic
Mix all ingredients in a large bowl and refrigerate for at least an hour. Enjoy!!
*for those busy bodies, frozen mango comes chopped!*
