Meatloaf Cupcakes with Whipped Potato Topping
Ingredients:
1 lb (500g) ground beef
1 onion, finely chopped
2 garlic cloves, minced
1 carrot, grated
1/2 cup breadcrumbs
1 egg
1/4 cup ketchup
2 tbsp Worcestershire sauce
Salt and pepper, to taste
2 cups mashed potatoes (prepared)
1 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
Directions:
Preheat the oven to 375°F (190°C) and grease a muffin tin.
In a large bowl, combine the ground beef, onion, garlic, carrot, breadcrumbs, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Divide the meat mixture evenly among the muffin cups, pressing down lightly.
Bake in the preheated oven for 25-30 minutes, or until the meatloaf cupcakes are cooked through.
While the meatloaf cupcakes are baking, prepare the mashed potatoes if you haven't already.
Remove the muffin tin from the oven and spread a dollop of mashed potatoes on top of each meatloaf cupcake.
Sprinkle the shredded cheddar cheese over the mashed potatoes.
Return the muffin tin to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving. Garnish with chopped parsley, if desired.
