Sheet pan lemon garlic chicken with roasted veggies — quick, nutritious, and perfect for busy weeknights.
Ingredients:
- 2 boneless chicken breasts, cut into chunks
- 1 cup broccoli florets
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of ½ lemon
- Salt & pepper
Instructions
- Preheat oven to 400°F.
- Place chicken, potatoes, broccoli, and carrots on a sheet pan.
- Drizzle with olive oil and lemon juice.
- Add garlic, salt, pepper, and seasoning.
- Toss everything together and spread evenly.
- Bake 20–25 minutes until chicken is cooked and vegetables are tender.
