Sheet pan lemon garlic chicken with roasted veggies — quick, nutritious, and perfect for busy weeknights.

Ingredients:
- 2 boneless chicken breasts, cut into chunks
- 1 cup broccoli florets
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of ½ lemon
- Salt & pepper

Instructions
- Preheat oven to 400°F.
- Place chicken, potatoes, broccoli, and carrots on a sheet pan.
- Drizzle with olive oil and lemon juice.
- Add garlic, salt, pepper, and seasoning.
- Toss everything together and spread evenly.
- Bake 20–25 minutes until chicken is cooked and vegetables are tender.

This quinoa bowl works for a great lunch or dinner option!

Ingredients (Serves 2–3)
Base:
- 1 cup uncooked quinoa (or 2½–3 cups cooked)
- 2 cups chopped kale
- 1 cup grilled chicken breast, diced
- ½ cup cherry tomatoes, halved
- 1 avocado, diced
- ½ cup chickpeas, drained & rinsed
- 2 tablespoons pumpkin seeds

Creamy Lemon Dressing:
- 3 tablespoons olive oil
-j uice of ½ lemon
- 1 tablespoon Greek yogurt
- 1 teaspoon Dijon mustard
- Salt & pepper to taste
Whisk together until smooth.

Instructions
- Cook quinoa according to package directions and let cool.
- Coat kale lightly with a drizzle of olive oil.
-In a large bowl, combine quinoa, kale, chicken, tomatoes, avocado, and chickpeas.
- Drizzle with dressing and toss gently.
- Top with pumpkin seeds and serve.

Sick of the same old lunch? Here is an easy recipe to switch things up.

Ingredients:
- 1 cup pre-cooked brown or jasmine rice
- 4 oz grilled or rotisserie chicken, chopped
- ½ cup shelled edamame (frozen or fresh)
- ½ cup shredded carrots
- ½ cup broccoli cooked (fresh or frozen)
- ½ bell peppers
- 1–2 tablespoons soy sauce or teriyaki
Optional: sesame seeds or green onions

Instructions:
- Microwave rice, edamame, and veggies (as needed) until warm.
- Add warmed chicken to the bowl.
- Add raw veggies.
- Drizzle with sauce.
- Mix and enjoy
