Simit (Turkish Circular Bread)
Ingredients
- 400 g flour,
- 1 1/3 tsp instant dry yeast,
- 40 g molasses
- olive oil
- 1 tsp salt,
- 150 g hulled sesame seeds
- 1 tablespoon water

Preparation
In a medium bowl combine the dry ingredients.

Make a well in the center and pour the olive oil and lukewarm water into the well.

Knead the dough with your hands for 5-10 minutes.

Divide the dough into 16 equal pieces.

Take two pieces and stretch the dough into thin strips (about 30-35 cm long).

Cover the rest of the dough to prevent it from drying out.

Place 2 strips side-by-side, pinch the ends. Twist them together and pinch to join the ends.

Place the rings on baking sheets lined with parchment paper.

Let the dough sit in a warm place for 20-30 minutes.1

Preheat the oven to 200C.1

Pour the sesame seeds into the pan and turn the fire on medium heat.1

Stir the seeds every 4-5 minutes until golden. Set aside.1

Pour molasses and boiling water into a bowl big enough to fit your rings.1

Whisk to dissolve the molasses completely.1

Put the sesame seeds in another bowl.1

Dip both sides of the rings in the liquid, drain excess moisture, then coat both sides in the sesame seeds.1

Transfer them to the baking sheets.1

Bake in preheated oven for about 17 minutes.

Eggless Ginger & Mango Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup whole wheat flour
- 1/4 cup semolina [sooji]
- 4 tablespoons brown sugar [adjust to taste]
- 1 1/2 cups Alphonso mango puree [or fresh pureed mangoes]
- 1/4 cup caramalized ginger pieces, chopped fine
- 1/2 tablespoon cup milk+ 3 milk [2%]
- 1 teaspoon baking powder
- a pinch of baking soda
- a pinch of salt
- 3 tablespoons ground flax seeds [or flax meal]
- 1/4 teaspoon cinnamon [optional]
- 1/4 teaspoon dry ginger powder
- 1/4 teaspoon fresh grated nutmeg [optional]
- 1 teaspoon pure vanilla extract [optional]
- Raisins [optional but recommended]

Preparation
Pre-heat the oven to 180C/350F.

In a small bowl mix flax-seed powder with 3 tbsp milk and set aside.It is necessary to soak this for at least 10 minutes to let the gelatin set up in the mix.

In a mixing bowl, mix together all flours, sugar, baking powder, baking soda, cinnamon & ginger powder, nutmeg and salt.

Add the caramalized ginger pieces & raisins [if using].Set aside. You can use more nuts !

In another bowl mix the mango puree, flax-seed mix, vanilla essence, and milk well.

Now make a well in the centre of the flour mixture and tip in the wet mixture.Fold in gently so that everything just comes together.Dont over mix!

Grease a 9 X 5 loaf tin with oil, and pour the batter into it.Level it with the help of a spatula.

Bake for 40-50 minutes or till a skewer comes out clean. Mine took 43 minutes.

Remove from oven & let it cool in the loaf pan for 5 to 10 minutes.

Unmold and transfer to a cooling rack to cool for at least an hour or more before slicing.

Slice the bread after completely cooled.No prizes for guessing that I was impatient and hence not- so- neat slices in the pics!

Healthy Indian breakfast - Broccoli, Carrot, and Pepper Upma
Ingredients
- 1 (10 oz.) pkg. frozen, chopped broccoli, thawed
- 1/2 cup carrot
- 1 large green chilli
- 1/2 cup green peppers
- a lime
- 1 teaspoon of vegetable oil
- 1 cup of water
- 1 cup semolina or an upma premix
- 1 cup semolina or an upma premix

Preparation
In a pot, gently dry roast the semolina/upma premix for a minute or two.

Add oil and water to the roasted semolina and cook for approximately 7-10 minutes.Once the semolina is cooked, add the chopped up vegetables.Stir for half a minute and turn off the gas.

Kidney Pie - good for kidneys and your entire body
Ingredients
- 1 beef bouillon cube
- 1/2 cup sliced carrots, cooked
- 2 tablespoons flour
- 1 small onion, chopped
- 1 cup cubed potatoes, cooked
- 1 salt and pepper
- 1 veal kidney
- 1/4 cup cold water

Preparation
First wash the kidney well. Cover with cold water and let stand for about an hour.

Drain.

Remove the cords and all of the center fat.

Cut into small pieces. Now combine the bouillon cube and boiling water.

Add the chopped kidney. Simmer for 20 minutes.

Combine the flour and cold water, mixing well; add to the kidney mixture, stirring constantly until thickened and smooth.

Add the cooked vegetables, and season to taste with salt and pepper.

Pour mixture into a baking dish, and cover with small baking powder biscuits or pastry dough.

Bake at 400F.

Love this simple Homemade Muesli Breakfast Cereal
Ingredients
- 1 handful Apple Chunks
- 1/4 cup Corn Flakes/Bran Flakes
- 1 handful Cashews, Almonds and/or Walnuts
- 1 handful Craisins, Raisins, Apricots, Figs
- 1 tablespoon Honey
- 1 tablespoon Olive oil
- 1/4 cup Uncooked quick rolled Oats
- 1 teaspoon Sesame seeds
- 1 tablespoon Wheat Bran
- 1 tablespoon Wheat Germ

Preparation
Preheat the oven to 250 degrees F.

Mix the olive oil and honey in a bowl and warm slightly

In a oven-proof dish, mix all the other ingredients and pour in the warmed oil-honey mixture.Give it a brisk stir and pop into the oven for 30 minutes, stirring now and then.

Remove from the oven and cool for an hour.

Try this Baked Oatmeal with Dried Cranberries and let me know if you like it?

Ingredients
- 1 cup almond milk (I used original unsweetened)
- 2 tsp baking powder
- 2 very ripe bananas, mashed
- 1 1/2 tsp cinnamon
- 1 cup dried cranberries
- 2 eggs
- 1 tbsp flaxseeds
- 3 cups dry oats (I used old fashioned oats)
- 1/4 teaspoon Salt
- 1 tsp vanilla extract

Preparation
Preheat oven to 350F

Mix dry ingredients until well combined.

Mix liquid ingredients separately.

Add the liquid ingredients to the dry mix.

Mix well.5.Spray a pan with a non-stick spray - the smaller the pan, the thicker the bars will be.

Pour the mix into the pan.

Bake for 45 minutes.8.Enjoy!

These look weird but taste amazing.... Xocai Healthy Chocolate Dreams

Ingredients
- 32-34 Xocai Healthy Chocolate Nuggets
- 1/2 cup coconut
- 3 cups oats
- 1 tbsp Peanut Butter (Natural Peanut Butter)
- 1 can sweetened condensed milk (fat-free)
- 1 tsp vanilla

Preparation
Melt Nuggets in slow-melt low-temp pot (110-degree limit). When melted, stir in vanilla and peanut or almond butter.

Mix together in same pot until smooth. In large bowl combine oats and coconut. Set aside.

Add sweetened condensed milk to the hot mixture. Stir until mixture is smooth.

Add hot mixture to oats.

Mix until all oats are covered. Drop spoonfuls on top cookie sheet covered with parchment or wax paper. Refrigerate or serve at room temperature. Makes 24 candies

Hate baking? Try these No Bake Chocolate Peanut Butter Oatmeal Cookies

Ingredients
- 1/4 cup cocoa
- 2 tablespoons margarine
- 1/4 cup milk
- tablespoons peanut butter
- 1 1/2 cups quick-cooking oats
- 1 dsh salt
- 1/2 cup sugar
- 1 teaspoon vanilla extract

Preparation
Microwave the margarine in a microwave safe bowl for 15-30 seconds, until the butter is melted.

Add cocoa and blend until the cocoa is dissolved into the margarine.

Add the sugar, milk, and salt. Blend well.Microwave on HI for 1 minute 10 seconds to bring to a full boil. (Should you need to microwave the batter more, do so in 10 second increments.) You want a full boil, but because it will continue to cook for awhile once it's remove from the microwave, heating it too long can cause the mixture to scorch.

Add the vanilla, peanut butter, and oatmeal. Stir well. Drop by tablespoonfuls onto waxed paper. Cool.

Make these simple Homemade Chewy Granola Bars. Great for your body and budget... : )

Ingredients
- 1 cup packed brown sugar
- 2/3 cup peanut butter
- 1/2 cup light corn syrup
- 1/2 cup butter, melted
- 2 teaspoons vanilla
- 3 cups quick cooking oats
- 1/2 cup coconut
- 1/2 cup sunflower nuts
- 1/2 cup dried cherries
- cup wheat germ
- 2 tablespoons sesame seeds
- 1 cup chocolate chips

Preparation
Grease 13 x 9 inch pan. In large bowl, combine brown sugar, peanut butter, corn syrup, butter and vanilla; blend well. Stir in remaining ingredients. Press mixture evenly into pan.

Bake at 350 degrees for 15-20 minutes or until light golden brown. Cool completely and cut into bars. Store tightly covered.

Kc's Oreo Cheesecake recipe

Ingredients
- 1 package (1 lb. 2 oz.) OREO Cookies, divided
- 1/4 cup (½ stick) butter, melted
- 1/2 teaspoon Knox Gelatin
- 3 tablespoons milk
- 2 packages (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 3/4 cup Sugar
- 1 teaspoon Vanilla
- 2 cups whipping cream

Preparation
Coarsely chop 15 cookies.

Finely crush remaining cookies and mix with butter.

Press onto bottom of 13x9-inch pan.

Refrigerate while preparing filling.

Beat whipping cream in a bowl with hand/stand mixer until soft peaks.

In a small saucer, heat milk and gelatin in microwave oven for 15 seconds or until melted.

Beat cream cheese, sugar, vanilla and gelatin mixture in a large bowl until well blended.

Gently fold in whipping cream and chopped cookies.

Spoon over crust.

Refrigerate for 2 hours or until firm.

How about some ....Maple-Nut Oatmeal Cream Pies
Ingredients
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/4 cup butter, softened
- 1/2 cup vegetable or canola oil
- 1 1/2 teaspoons cinnamon
- 4 oz cream cheese, softened
- 5 eggs
- 1 cup all-purpose flour
- 1 teaspoon maple flavoring
- milk, if needed
- 1 teaspoon nutmeg
- 3/4 cup chopped nuts (pecans, walnuts, almon
- 2 cups old-fashioned rolled oats
- 2 cups powdered sugar
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1 cup unsweetened applesauce
- 1 teaspoon vanilla
- 2 tablespoons water

Preparation
In a large bowl, combine oats, flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.In another bowl, beat eggs, applesauce, water, oil, and vanilla until well mixed, then stir into dry ingredients just until moistened. DON'T overmix. Gently fold in the nuts.Drop batter by 2 tablespoons, 2 inches apart on a greased cookie sheet, shaping each into a circle.

Bake at 350 for 9-10 minutes or until tops are firm.

Remove to wire racks to cool.In a small mixing bowl, beat filling ingredients together until light and fluffy, about 2-3 minutes.

Add a tablespoonful of milk if you'd like it thinner. (I usually add 1 or 2.)

Spread over bottom of half the cookies; top with remaining cookies. Store in refrigerator.Note: If you find that they spread too much when baking, add a few tablespoonfuls of flour to the remaining batter.
