NATIONAL IRISH COFFEE DAY kicks off January 25th each year with a mug of strong coffee, Irish whiskey, sugar, and topped with a layer of cream.

Also enjoying a day of swapper-roos is the main goal of NATIONAL OPPOSITE DAY, which takes place on January 25. Apart from not celebrating, what more could one want for? That isn't necessarily what we mean, is it? Talking solely negatively is the opposite or "not" game that is played all day.

Every year, NATIONAL RELIGIOUS FREEDOM DAY celebrates the signing of the Virginia Statute for Religious Freedom on January 16, 1786. Typically, by Presidential Proclamation, January 16th is recognized as Religious Freedom Day. This important statute ensures the basic right to practice one's faith openly, free from harassment, imprisonment, or violence.

Today is also NATIONAL FIG NEWTON DAY. Interestingly, in the U.S., Fig Newtons are labeled a cookie. In the U.K., they are labeled a biscuit.

January 15th marks NATIONAL STRAWBERRY ICE CREAM DAY. Interestingly, strawberry ice cream was served during James Madison's second inauguration in 1813. Even with the chilly weather, it's a perfect excuse to treat yourself to a generous bowl of this delicious dessert.

In 2005, the U.S. House and Senate passed simple resolutions in support of KOREAN AMERICAN DAY on January 13th. In December of 1902, 102 Korean immigrants sailed to Hawaii representing the first wave of Korean immigration.
