I always have these items packed in my car just in case for an emergency. I always think it’s important to have protein available and electrolytes. You don’t know when an emergency will hit, but considering we live in the south, we’ve had a lot of emergencies due to storms lately. Be safe.

Chicken

Biscuits with brown gravy

Sautéed Spinach

Sweet and Sour Red Cabbage (balsamic, butter, salt/pepper)

Sweet Potato Mash (made with ghee and cinnamon)

Chocolate Chess Pie

We’ll miss making our usual Sunday dinner tomorrow, so today it is. Kids were thrilled. I loved the red cabbage and will definitely make it again. Real food tastes so damn good.

Tomorrow is the first day of her senior year. She still uses the same bento. Bittersweet. I’m grateful I taught the kids balance with real food to sugar. Here you can see she chose her fave: chocolate 🍫.

It is a rare morning where I can get what I need to done and not feel rushed. Not to mention I have to head to the office soon. This morning, before the kids woke, I made almond flour pumpkin donut holes. I added collagen into the mix, 3 eggs, canned pumpkin and the almond flour (arrowroot, baking soda, salt and spices). I’d say these will be a good source of protein.

In the morning, the middle child creates a nutritious meal. No matter what the ingredients are, he’s intentional. This is something that I’ve instilled in the children after over a decade of creating meals. They watch, learn and GROW! I now watch them create their breakfasts, bentos and snacks with the goal of balance. Raw yogurt, local honey, homemade granola and store bought blueberries (he just received 4 blueberry bushes from his grandpa, but they need time until harvest). Watching these simple ingredients be made into his breakfast, brought joy.

I’ve passed the bento making down to the kids and they thank me for my efforts daily. It’s sweet. I only want them to eat real food and with that, my son, is enjoying his exotic fruits this week in his bento. Kid turned 13 and asked for some of the hardest to find fruits for his birthday. A HUGE THANK YOU to for not only having some of his requests, but shipping was fairly quick!

FAMILY

We have a very blended family. A journey that was anything but easy… decades in the making. So many different personalities, different stages in our life, BUT we all love one another. Our time together is around the dinner table mostly. A treasured pastime that seems outdated now. If you aren’t present in your children’s lives, listening and engaging, you will lose them. So our table is where slow food is served, bentos created, conversations had and always a good game of dominoes is around the corner.

On this day I enjoy filet mignon, a glass of red and chocolate covered strawberries. As I cook tonight though, I have one kid who hates steak.

How can you hate filet?!?!

So, in honor of Valentine’s, I found the ultimate in processed meat: the chicken nugget and in the shape of a ♥️.
