Stay cool and nourished with this simple, wholesome summer recipe. 🍉🥒☀️

Ingredients:
½ cup red wine vinegar

2 tsp honey

¼ tsp salt

¼ tsp ground pepper

¼ cup extra-virgin olive oil

5 cups cubed seedless watermelon

1 English cucumber, chopped

6 oz feta cheese, cubed

½ cup thinly sliced red onion

2 Tbsp chopped fresh mint

Whisk together vinegar, honey, salt, and pepper; slowly whisk in oil. Toss with watermelon, cucumber, feta, and onion. Top with mint. Chill and enjoy!
