I love our chocolate, vanilla & salted caramel lean!!

Almost time for holiday baking!

Healthy alternatives anyone?

So easy and so good! I love that our Lean is so versatile!

NO BAKE GUILT FREE treats

PUMPKIN SPICE PROTEIN BALLS
- 12 soft Medjool dates, pitted
- 3/4 cup pumpkin puree (canned pumpkin)
- 1 cup Vanilla Lean
- 1 tsp pumpkin pie spice
- 1⁄2 tsp cinnamon
Mix all ingredients together IN A FOOD PROCESSOR and roll into balls, ROLL IN CINNAMON-refrigerate.

COCONUT PROTEIN BALLS
- 1 cup of Coconut Cream (from a can)
- 4 cups shredded coconut
- 1 cup Vanilla Lean
Mix first 3 ingredients thoroughly, form into balls then roll in the extra coconut.
Additional coconut for rolling

DARK CHOCOLATE CHERRY COCONUT PROTEIN BALLS
- 1 cup of Chocolate Lean
- 1 1/2 cup cocoa powder
- 1/2 cup coconut cream
- 1 cup of dried cherries (soak in warm water for 15 min)-drain well
- 1 cup of almond butter
- 1⁄2 cup dark chocolate chips
Mix coconut cream and almond butter thoroughly, place in food processor and add cherries-pulse until cherries are at a desired size, add protein powder and cocoa powder, blend well. Mix in chocolate chips by hand. Roll into balls. Melt chocolate chips in a double boiler and drizzle over balls. Refrigerate

ALMOND JOY PROTEIN BALLS
- 1 cup of Chocolate Lean
- 1⁄2 cup cocoa powder
- 1 cup of coconut cream
- 4 cups shredded coconut
- 1 tsp almond flavoring
Additional coconut for rolling.
Mix all ingredients together in a Food processor. Roll into balls then roll in extra coconut. Refrigerate.

PINA COLADA PROTEIN BALLS
- 1 cup almond butter
- 1 cup Vanilla Lean
- 1 teaspoon pure vanilla extract
- 1/2 cup pineapple juice.
- 1 cup Medjool pitted dates (soaked)
- Juice of a lemon.
- 1 cup organic, shredded, unsweetened coconut.
- 1⁄2 cup dried pineapple (optional)
Mix all ingredients in a food processor. Form into balls.

CHOCOLATE PEANUT BUTTER BALLS
- 1 cup Chocolate Lean
- 1 cup organic peanut butter
- 1⁄2 cup raw honey
- 1⁄2 cup chopped peanuts
- 1 cup chopped oats
- 1/2 cup mini chocolate chips
Mix all ingredients in a food processor. Form into balls.

PB & J PEANUT BUTTER BALLS
For the peanut butter part:
- 1/2 cup Vanilla Lean
- 1/2 cup organic peanut butter
- 1/4 cup raw honey
- 3/4 cups of chopped oats
For the Jelly part:
- 10 Medjool dates, pitted
- 1/2 cup dried blueberries
- 3⁄4 cup almond or cashew butter
- Pinch of salt
Mix ingredients IN A FOOD PROCESSOR for each part and form into small 1⁄2 balls with
each mixture. To assemble push a Jelly ball and a peanut butter ball together and roll into a ball.

LEMON COCONUT PROTEIN BALLS
- 1 cup raw almonds
- 1 cup Medjool dates, pitted
- 1 cup Vanilla Lean
- 1⁄2 cup lemon juice
- 1/3 cup shredded coconut for rolling
Mix all ingredients in a food processor until blended. Roll into balls.

CHICKEN FAJITA CASSEROLE
INGREDIENTS
1.5 pounds chicken breast (about 4 breast)
1 tablespoon olive oil
2 tablespoons taco seasoning
2 cups bell peppers, sliced (mixed colors)
1 cup onion, sliced
1 1/2 cup shredded cheese (cheddar, pepper-jack, mozzarella or a mix of these)
INSTRUCTIONS
Preheat the oven to 400 degrees F.
In a greased casserole dish drizzle the chicken breast with the olive oil and sprinkle the taco seasoning over the chicken. Using your hands, or tongs toss the chicken several times so it is coated well.
Add the chopped peppers, onions and shredded cheese on top of the seasoned chicken, cover with foil. Bake the chicken for 20 minutes, remove the foil and bake an additional 10 minutes until the internal temp reaches 165 degrees F.

Blanch for 4 minutes
Pat cauliflower dry
Mix 1 cup mayo & 1 cup shredded Parmesan
Spread on cauliflower season with pepper and garlic powder and bake 20 minutes at 375

Rao’s Marinara
Ground Sausage
Pepperoni
Sautéed Onion
Sautéed mushrooms
Mozzarella cheese
Flavor Gods Pizza Seasoning
Garlic powder
Crushed red pepper flakes
I use the disposable pie pan
Add desired amount of Marinara to pan first.
Then add sausage, pepperoni, onions, mushrooms, seasonings and top with cheese

Zucchini Lasagna 😋
3-5 zucchini and/ or yellow squash (medium size)
1 lb. of ground beef or ground turkey (browned and mixed with sauce)
10-12 oz Raos marinara sauce
15 oz. of ricotta cheese
1 egg
2 cups of mozzarella cheese
2 cups of Parmesan cheese (regular or grated or powder
Spices to taste (oregano, Italian seasoning, salt, pepper)
👇👇👇👇
Layer ingredients starting with: zucchini, mozzarella cheese, ricotta (mixed with spices and egg), beef with Rao’s, Parmesan cheese. Repeat layers until complete.
Top with mozzarella cheese and Parmesan cheese to taste. Bake at 350 for approximately 45 minutes to 1 hour.
(Water released from zucchini can be drained before serving).

Baked Salmon and Asparagus in Foil with Lemon Garlic Butter Sauce

Ingredients:
2 slices of salmon fillet
2 tablespoons vegetable broth or chicken broth
1 1/2 tablespoon fresh lemon juice, or to taste
1 tablespoon of your favorite hot sauce (we used Sriracha)
4 teaspoons minced garlic (4 cloves)
Salt and fresh ground black pepper, to taste
3-4 tablespoons butter, diced into small cubes (or ghee)
2 tablespoons fresh chopped parsley or cilantro
1 lb (450g) medium-thick asparagus, woody ends trimmed

Instructions:
1. Preheat your oven to 425ÂșF (220ÂșC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy duty aluminum foil then lay each piece separately on the countertop. In a small bowl, combine the ingredients for the sauce: broth, lemon juice, and hot sauce.
2. Divide salmon fillets onto the aluminum foil near the center then place trimmed asparagus to one side of the salmon, following the long direction of the foil.
3. Sprinkle over garlic and then season with salt and pepper. Drizzle the sauce generously over the salmon fillets.
4. Divide butter pieces evenly among the foil packets, layering them over the salmon and asparagus.
5. Wrap packets in and crimp edges together then wrap ends up. Don’t wrap too tight – keep a little extra space inside for heat to circulate.
6. Transfer to a baking sheet and bake in the oven, sealed side upward until salmon has cooked through, about 9 – 12 minute.
7. Carefully unwrap the baked salmon foil packets then drizzle with more lemon juice and garnish with fresh parsley or cilantro and a slice of lemon. Enjoy!

Notes:
1. You can double the amounts for a family meal.
2. In general, it is better to not overcook salmon. If you like salmon and asparagus a bit crispy, just open the foil packs and broil in the oven for 2 minutes.
3. If aluminum foil is a concern, you can use parchment paper to make the packets
4. For non-keto dieters, a teaspoon of honey over the salmon fillets is a must!
