Why do I do this work? Because I know exactly what it feels like to struggle and not be taken seriously.

There was a time when I couldn’t think through simple decisions, I would reread the same sentence over and over, and I would lose my train of thought in the middle of important conversations. Not because I was “getting older,” but because my body was dealing with Hashimoto’s, years of undiagnosed Celiac, H. pylori, and gut dysbiosis. It took me a long time to understand what was actually happening, and I remember how isolating that felt.

That experience is why I care so deeply about helping people now. I don’t want anyone to go through that kind of confusion or frustration, whether they are people I love, people I’ve never met, or anyone in between. I want people to have answers and a path forward instead of guessing and blaming themselves.

Today I help people turn their symptoms into a roadmap so we can see where their body needs support. It’s meaningful work, and I’m grateful every day that I get to do it.

Here are some examples of how much iron comes from greens and beans, but understanding how absorption works makes all the difference.

What about spinach? 🤔
If you’ve read the claim that spinach is basically useless for iron because of oxalates, let’s set the record straight.

Spinach is high in iron, but back in 1991, a Scientific American article suggested that we absorb very little from it (less than 2%) because of oxalate content:

Scrimshaw NS. (1991). Iron deficiency. Sci Am. 265(4):46–52.

That idea stuck, and it still circulates today 🙄 despite newer research showing otherwise. In 2008, researchers compared iron absorption from high-oxalate spinach and low-oxalate kale.

The result? They expected spinach to have significantly lower absorption because of the oxalates, but despite their beliefs, there was NO significant difference in absorption.

If you're looking to boost your iron intake, pair your greens and beans like the ones from this list, with vitamin C-rich foods like bell peppers, lemon juice, or strawberries to help your body absorb more of the iron.
