✨ Afternoon in my life + a dinner recipe I can’t stop making 💗🍜
These Spicy Creamy Almond Butter Noodles are SO good and surprisingly easy 🤌
🥕 Cook your favorite veggies (I used carrots, zucchini & bell peppers) with a little salt, pepper, garlic powder & soy sauce.
🍜 Boil a package of thick noodles according to package directions.
✨ Crisp up some firm tofu until golden and crunchy.
🥣 Sauce:
• 2 tbsp almond butter
• Soy sauce
• Rice wine vinegar
• Sesame oil
• Garlic powder
• Maple syrup
• Chili oil or sriracha 🌶️
• Fresh lime juice 🍋
• Pinch of salt
Mix the noodles, veggies & sauce together, then top with crispy tofu and fresh cilantro 🌿
