Recipe of the Week
Crockpot Coconut Curry
Ingredients:
• 1 lb. boneless, skinless chicken breast, cubed
• 2 tsp coconut extract
• 1 ½ cups water
• 1 to 2 Tbsp Better then Bullion chicken flavor
• 2 to 4 Tbsp dried onions
• 1 Tbsp curry powder
• 1 Tbsp turmeric
• 2 tsp fresh ginger, minced or grated
• 2 tsp crushed garlic
• 1 cup red bell pepper, cut into thin strips
• ½ tsp sea salt
• Cayenne pepper to taste
Directions:
1. Place everything in a slow cooker.
2. Cook on high for 2-3 hours or on low for 4-6 hours.
3. Serve over cauliflower rice or add other veggies.
• Freshly ground black pepper to taste
