Poached Eggs With Sautéed Greens and Sweet Potato Rosti

Ingredients
* 2 large eggs
* 200g sweet potato, grated
* 1 tbsp olive oil
* 100g kale or spinach, chopped
* 1 garlic clove, minced
* Salt and pepper

Method�🥦 Form the grated sweet potato into two patties. Squeeze any excess moisture out if needed.
🥦 Fry them in olive oil for 3–4 mins each side until crisp with golden brown edges.
🥦 Sauté the garlic in a little olive oil and after 2 minutes, throw in the spinach and cook until wilted.
🥦 Poach the eggs in simmering water 3–4 mins. My technique is to bring the water to the boil, then. take it off the heat. Crack the eggs in whilst the water is still and let the whites begin to cook. At this point return to a gentle heat so it is gently simmering.
🥦 Serve the eggs on the rosti, and the greens on the side.
