Back from a beautiful vacation and quality time with my family—my heart (and cup) is full! 🌞💛

Now I’m easing back into my routine with fresh, light meals. My mom gifted me some incredible shrimp, so I whipped up a quick sauté with butter, olive oil, garlic, lemon juice, and a sprinkle of seafood seasoning. I chopped the shrimp and added it to a bagged chopped salad mix with red bell pepper, cherry tomatoes, and cucumbers.

Tossed everything in fresh lemon juice and a zesty lemon vinaigrette (swipe to see the one I used!). 🍤🥗

This salad is super refreshing and perfect for lunch or dinner meal prep. Light, flavorful, and so easy! 💚

Happy Monday! This is the day the Lord has made. I will rejoice and be glad. I say this every single day when I wake up. And to be honest, I’m not always happy, glad and feel like rejoicing. But, God is good and faithful.

When life happens, whether it hits hard or you spill your coffee, or your day is amazing (which I hope it is), it is a gift back to us to offer God praise and worship.

Remember, God is in control. Believe and hold on to His promises. Remember, all your help comes from God. Your peace, your finances, your energy, your good attitude, your sanity. Any thing you need, God has it!

How Do You Add Veggies to Your Meals?

One of the best habits you can develop is adding vegetables to every meal—including breakfast! And no, breakfast doesn’t have to be the usual eggs, toast, or oatmeal. The word breakfast simply means you’re breaking a 7-8 hour fasting window from sleep (hopefully, you’re getting at least that much rest!).

Oh, and just a little reminder—coffee with creamer (and probably sugar) isn’t breakfast. It can actually suppress your hunger signals, which might lead to grabbing something high in calories, fat, and unrefined carbs later on.

Now, back to veggies! I often eat eggs for breakfast and love adding diced bell peppers, garlic, onion, or whatever veggies I have on hand. Today, I threw in some turkey sausage crumbles and a sprinkle of cheese, plus a slice of toast with peanut butter for healthy fats.

Looking for creative ways to add more veggies to your breakfast? Try these ideas:
1. Low-sodium V8 – A quick and easy way to drink your veggies.
2. Celery & baby carrots – Simple, crunchy, and ready to go.
3. Smoothie boost – Add spinach, kale, or frozen cauliflower for extra nutrients.
4. Breakfast salad – Who says salad is just for lunch? Load it up with eggs, avocado, and your favorite veggies.
5. Powdered veggie mix – Stir it into water or a smoothie for an easy nutrient boost.

A simple and delicious Asian Inspired chopped salad!

I used a pre-mixed salad blend, red and green bell peppers, canned tuna, and a petite cucumber for the base.

For the dressing, I whisked together peanut butter, honey, fresh orange juice (or lime), sesame oil, salt, pepper, ginger powder, and garlic powder—a perfect balance of sweet, savory, and tangy flavors!

My favorite way to prepare this is by placing everything on a cutting board, pouring the dressing over the top, and chopping as I mix. It helps all the flavors come together beautifully!

My Go-To Single-Serving Pancake Recipe

When I’m not in the mood for oatmeal, I make this simple, delicious pancake instead! It’s easy, wholesome, and perfect for a quick breakfast. Here’s how to make it:

Ingredients:
• ½ cup rolled oats (blended into oat flour)
• 2 tbsp coconut flakes (blended into coconut flour)
• 1 tbsp flaxseed meal + 3 tbsp water (let sit in a separate bowl)
• ⅓ cup milk of choice (I used soy milk)
• 1–2 packets of stevia
• ⅛ tsp baking powder
• Pinch of salt
• Coconut oil for cooking

Instructions:
1. Prep the ingredients: Blend the oats and coconut flakes separately into a fine flour using a food processor. In a small bowl, mix the flaxseed meal with water and let it sit for a few minutes to thicken.
2. Mix the dry ingredients: In a bowl, combine the ground oats, ground coconut flakes, salt, baking powder, and stevia.
3. Add wet ingredients: Stir in the milk and thickened flaxseed mixture until fully combined.
4. Cook the pancakes: Heat a pan over medium heat and add a little coconut oil. Pour in half the batter, and when the edges look crispy, flip. Repeat with the remaining batter.
5. Enjoy! This recipe makes about two pancakes—perfect for a single serving.

I’ve been teaching group fitness and personal training for over 20 years, and fitness is what first sparked my passion for health and wellness. I love it! Today, I taught yoga—followed by Pilates—and it reminded me why I’ll always teach in some way.
