❤ Valentine's Day Oatmeal Bites ❤

1 Cup Old Fashioned Oats
1/4 Cup Creamy Peanut Butter
1/4 Cup Pure Honey
1/4 Cup Flaked Coconut
1/4 Cup Roasted Sunflower Seeds
1/4 Cup Festive M&Ms
Optional Heart-Shaped Sprinkles

1. In a medium bowl, mix together all the ingredients, leaving out the sprinkles.
2. Place the mixture in the refrigerator for 20 minutes.
3. After chilling, use a cookie scoop to shape the mixture and place it on a parchment-lined baking sheet.
4. If you wish, sprinkle some heart-shaped decorations on top of each bite.
5. Return the bites to the refrigerator for another 20 minutes to set.
6. Enjoy your delicious treats!

Most of us don't eat beautifully plated meals--but we do eat with our eyes!

Here are 9 meals that take 5 minutes to put together with minimal prep and no recipe required.

Notice they have a combination of a protein source, carb source (even if that is a fruit or veggie) and a fat source. Also notice, they have color! More color on your plate means more of those micronutrients like vitamins, minerals and other phytonutrients!

Iron found in animal products is called heme iron. Plant foods contain iron, too! This iron is called non-heme iron and our bodies need both.

If you have anemia, eat plenty of these foods to help boost your iron levels. Unlike taking an iron supplement alone, most of these foods also contain vitamin C which helps with the absorption of iron.

Iron helps transport oxygen around the body and this is why you feel low energy and tired frequently if you are anemic!
