Co-founder and author Mary Wendt, MD is a board certified internal medicine physician. Mary graduated from Michigan State University’s College of Human Medicine with post-graduate training at Michigan State affiliated Spectrum Health system. She has practiced medicine for twenty years, and focused on lifestyle medicine and nutrition for the past 8 years. She has lectured extensively and worked with leaders in the nutrition community. Tess Challis (author, vegan chef, and wellness coach) is the co-founder of Get Waisted. She's extremely passionate about guiding others to radiant health in a holistic, practical, doable way—all while enjoying the most delicious foods on the planet. Tess creates the healthy menus and delicious recipes that guide GW members to their goals in an enjoyable way, as well as the “From the Inside Out” portion of our program. She has written five books and travels across the country, teaching healthy cooking and speaking. She currently resides in Bradenton, FL. Jen Fournelle, Area Director for Richmond lives in Chesterfield with her husband, 2 year old and a crazy black lab. She is a fitness instructor that loves helping people get healthier and reach their personal goals. She is a lover of being outside, finding new recipes, playing with her kiddo, running and is slightly obsessed with her new woodworking hobby. Get Waisted provides weekly meetings and inspiring community, both in person and online. Members receive weekly menus, delicious premium recipes, online and in-person support, weekly newsletters, and much more! What I ate today!
1. Breakfast--Tofu scramble, air fried potatoes, smoothie--watermelon, strawberries, spinach, basil, squeeze of lime juice.

2. Lunch--Big salad with balsamic dressing. Tofu, tomato, lettuce sandwich with a little homemade pesto on it.

3. Dessert--Raspberries!

4. Dinner: Air Fried oyster mushrooms, baked sweet potato fries, roasted carrots and homemade pickled vegetables (in the jars!)

5. Dessert: Watermelon, strawberry, lime (and some spinach) popsicle!

Snacks--(not pictured) handful of peanuts, finishing my smoothie from the morning and a few roasted chickpeas. 2 squares of dark chocolate. 2 brazil nuts (I eat two a day for selenium)

1st breakfast--(not pictured) I wake up super early and sometimes have to eat something, so this morning I ate leftover chickpea pasta with pesto sauce from last night.

Hello friends and family! It's been so long since I've posted yummy veg recipes here! I wanted to share with you my super exciting new venture!!

I have been coaching people to live happier, healthier lives for 10 years now and I'm coming to the next phase of that! My new venture www.thefamilytechcoach.com is a place to help people and families redefine their relationship with technology to make sure it works *for* them instead of against them.

Looking for a family that wants to get healthier and happier. Whether it be moving more, cutting screen time, or healthier meals, I can help you move in the right direction. We can get healthier while still living in today's society and world. I know time for parents is of utmost importance, so we’ll have two 30 minute sessions for you to easily fit it into your schedule, approximately 1 to 1 1/2 weeks apart. You'll have practical, actionable steps and homework to take in between our sessions. I have been in health and fitness for 9 years coaching people of all ages and abilities to lead healthier lives. I am a mom myself and fully understand the challenges to a families' health in this day and age, and I am confident I can help your family make some positive changes without too much eye rolling from the kids! Green pancakes were made even better with the addition of an amazing carrot, apple, cinnamon & ginger juice from Ginger Juice!!!! Green pancakes are one of our favorite breakfasts!!!
Recipe in the comments--I use my own homemade pancake mix that I keep on hand for quick breakfasts!! Yum!!

Meal prep Sunday!! I followed The Happy Pear's rainbow meal prep and did everything (except the tempeh--forgot it!)!! So stoked for overnight oats & chia seeds for breakfast. Beet flatbread with spinach hummus, turmeric falafel and a simple cabbage & carrot slaw for lunch. Roasted veggies for dinner. And an amazing super green soup from Simple Green Smoothies. SO good and SO colorful and healthy!! Look how organized and healthy my fridge is!! Pumped for the week.

So nice to be home early enough to cook a lovely dinner! "Crab"cakes (made of chickpeas and hearts of palm), mac and "cheese" (cheese made with cashews, potatoes and carrots--brown rice and red lentil pasta) and roasted broccoli. Plant based deliciousness!!!

Why did I wait so long to make Rich Roll and Julie Piatt's amazing Cocao cashew latte (aka HOT CHOCOLATE). Like the rich, thick hot chocolate of your dreams. Except it's made with all whole real ingredients (cashews, h**p seeds, cocao and honey--because I ran out of dates!) and it is so filling and energizing. I've had their amazing cookbook since it came out and just made this for the first time two weeks ago. I've been dreaming about it ever since! And today... I took it up a notch by putting just a bit of Four Sigmatic's mushroom powder in. I am pumped for the day!!
