Hi everyone,
I hope you are enjoying your day so far, and above all staying cool!
If you are looking for a deliciously delightful and healthy salad recipe, for the summer, look no further. I have got you covered!!

What I love about this recipe is that you can truly make it your own. Try it out with different nuts, fruits, etc. Add as many or as few ingredients as you like.

If you have never tried goat cheese, give it a try and let me know what you think! Heads up...it is not for everyone!

RECIPE

DUSTED POMEGRANATE, GOAT CHEESE, AND TOASTED PECAN SALAD

Ingredients:
Large Container of Greens (Spring Mix, Herb Mix, Spinach and Arugula)
½ Cup Pomegranate seeds
½ Cup Toasted Pecans, Chopped or Whole
1 Small Log of Applewood Smoked Goat Cheese, cut into enough wedges, rounds or crumbles to add to each plate
1 lemon, juiced and zested
¼ Cup Olive Oil
Salt and Pepper to taste

Instructions:
In a small bowl whisk lemon juice, zest, and olive oil. Toss with greens. Sprinkle greens with pomegranate seeds, toasted pecans, salt and pepper to taste. Lastly, place a slice, wedge or enough crumbles of goat cheese on each plate.

Good morning, everyone!
I hope your day is off to a great start! If not, remind yourself of 3 things you are grateful for today.

This may not be you, but some people struggle with putting themselves FIRST or doing what really makes their heart SINGS.

I just want to leave this with you today in hopes that it inspires you to do what really matters to you NOW! Remember, tomorrow is not promised to you, and so you must make the most of each day.

Are you putting off things that you truly want to do? Are you happy and fulfilled with your life right now?

Your schedule will reveal all! What’s really important to you RIGHT NOW?

Make a list of the things that are really important to you and be intentional about making them happen. Just like you schedule a bill to pay or a pill to take, schedule what it is that matters most to you right now. You are important and you deserve to be happy and fulfilled TODAY, not just someday!

They gave their lives so that we could continue to live safe and free. We can honor them by doing all that we can do today to protect the freedoms that they fought and died for, especially now more than ever, during these very unstable, uncertain and, divisive times.
