Happy New Year!!

Do you make a New Year's Resolution? I never have. However, 10 years ago I embraced the "One Word That Will Change Your Life" concept. Have you heard this?

It's a process of a word finding YOU. That's the key. You don't choose it. It chooses you. Sometimes you don't even know why!!!

In 2014, in preparation for 2015, I began my usual process of looking for my word. The word STRONG kept coming to me. I couldn't imagine why STRONG would be a word to shape my life, to make me a better version of myself. But it was very clear that this was the word I was being told would be my word. Every time I prayed, meditated, or sat quietly, this word came through loud and clear.

I embraced STRONG as my word and used it, but really didn't find it to be the huge life changing word that my previous words had been.

And then August 2015 came around and my 13 year old daughter was diagnosed with cancer. Not only did I now need to BE strong, the previous 7 months of the year had shown me I already WAS strong!!

This is why it's so important to follow the steps and have a word choose YOU -- you don't always know what you need until you need it.

This year my word is FAITH. Similar to 2015, I am uncomfortable with the word and not sure where it will take me. Based on the definition of the word "Faith," I will need to have Faith that it is, in fact, the right word for 2024.

Resolutions don't work. This One Word concept does, when you embrace the process.

Do you eat quinoa?

I’m trying to be much for cognizant of the carbs I eat. I’m gluten free so most of my carbs come in the form of rice. I bought quinoa last week to use in place of rice, but I don’t love it - never have.

For 2023 I decided to add juicing to my world. I’ve also been adding dehydrated greens powder to my juice.

Here’s my process that I follow - with an emphasis on zero waste!

1) Blanche the greens. Once they are strained from the water you are left with some amazing goodness in there so I use it!

2) Greens go into dehydrator for about 10 hours.

3) The juice I’ve been making is beet, carrot and strawberry. The water I add to the blender is the leftover greens water!

4). There is leftover greens water so I freeze that in silicone muffin cups and then pop them out and store in a silicone bag in freezer.

5) I don’t strain the juice so it’s fairly thick. I usually water it down each day before adding my scoop of greens to it.

6). When greens are dried, I use a coffee grinder to powder them. It takes a lot of greens!!! I now know why it’s so expensive to buy them!!! One large bag of baby spinach yields about 1/2 cup powdered greens.

7) If you saw my vegetable broth post the other day, then you already know what I’m doing with my carrot peels! They go into the freezer for my next batch of vegetable broth!

Over the weekend I went to a Sourdough class! It was so much fun.

A few months ago I started to learn about some research showing how a very large majority of “gluten sensitive” people are actually sensitive to the fructan in the gluten - not the actual gluten. Some research has shown up to 92% of the people! So I started experimenting with eating sourdough bread and much to my happiness, I was fine!! 😁

Sourdough bread is fermented (has to be the real deal, not a fake loaf that adds sour flavoring). The fermenting process breaks down the fructan making it more digestible.

Last week I saw this class pop up in one of my FB Groups - so I went!

We made a sourdough starter to bring home, so it’s possible this weekend I will be trying to make my first loaf of bread.

From the sourdough discard, we made noodles and brownies!

If you know me, you know I despise anything needing a rolling pin and my noodles were a total disaster, so the instructor stepped in to assist. 😂

I came home and made a beef bone broth soup with Chuck roast, carrots and green beans - all items I had previously canned and were just waiting for me to put together as an instant soup! Delicious! 😋

Do you use Essential Oils? Which is your favorite?

My favorite, by far, is Frankincense. I use it every day, a little dab behind each ear.

There are three types of Frankincense: Boswellia carterii, Boswellia frereana or Boswellia serrata. Boswellia serrata is thought to have the most health benefits. The compounds contained in this oil have been found to have strong anti-inflammatory, and potentially anti-cancer, effects.

Studies have shown that frankincense oil exhibits strong immunostimulant activity, destroying dangerous bacteria and viruses.

Frankincense also is great for your skin! It can strengthen skin and improve its tone, elasticity, defense mechanisms against bacteria or blemishes, and appearance as someone ages. Frankincense is a great addition to your daily skin care routine to prevent wrinkles! It may help tone and lift skin, reduce the appearance of scars and acne, and treat wounds.

It's also thought to improve memory -- something I need for sure!!

Frankincense has also been shown to help regulate hormones -- including estrogen -- helping with related headaches, cramps, fatigue, mood swings, anxiety and more.

It also aids with digestion issues. It does this by speeding up the secretion of digestive enzymes, increasing urination production, relaxing the muscles of the digestive tract and helping improve circulation, which is needed for proper digestive health.

How to best use Frankincense? It can be used topically (like I do with a dab behind each ear. It is recommended to first mix with a quality carrier oil such as coconut or jojoba oil. Or you can inhale it by either using a diffuser, or putting a few drops into your hands, rubbing them together, cupping over your nose and breathing in.

Remember to use a pure essential oil, not a fragrance oil or perfume oil. A pure essential oil will always list the plant name on the bottle, and should not contain anything else.

To test for pureness, you can put a drop of oil on a piece of paper. It should fully evaporate. If it leaves behind residue, it is not pure and it contains an additive.

Parsley may be one of the most underrated herbs out there! How many times has it been served to us on a plate at a restaurant and we've pushed it aside thinking it's just decoration?

Parsley actually is very nutritious! It contains, among many other nutrients, Vitamin K, which is needed for bone health and blood clotting. It's also loaded with Vitamins A & C.

It also may play an important roll in fighting cancer. Many studies have linked Vitamin C to reducing your risk of cancer. In addition to Vitamin C, parsley also contains flavonoid antioxidants. Together with Vitamin C, these antioxidants have been shown to reduce oxidative stress in your body, which may reduce the risk of cancer.

Parsley is also great for eye health!! It contains Vitamin A, Lutein, beta carotene, and zeaxanthin -- all of which support eye health. Leutein and zeaxanthin have been shown to prevent age-related macular degeneration.

It's also beneficial to your heart! Parsley contains lots of the B Vitamin folate. One study of more than 58,000 people showed that the highest intake of folate reduced the rate of heart disease by 38%.

So, how much parsley do you need to eat in order to reap the benefits? Just 1/2 cup of parsley contains 11% of the RDI of folate, 108% of Vitamin A, 53% of Vitamin C, and 547% of Vitamin K! That's a whole lot of vitamins for something that's cast aside as garnish!!

Next time you go to the market, pick up a bunch of fresh parsley. Add it to your soups, sauces, salads, even when you make tuna fish salad. Parsley adds a fresh flavor and a nice crunch to your meals.
