Luscious Lemon Bars
INGREDIENTS
SHORTBREAD CRUST
1 pkg Shortbread Cookies Mix
1⁄2 cup unsalted butter, softened
1 tbsp water
LEMON LAYER
3 eggs
1 pkg Luscious Lemon Curd Mix
1⁄2 cup water
Topping (optional): icing sugar
PREPARATION
1. Preheat oven to 350° F. Place Perfect Petites on Sheet Pan. Using a basting brush, brush with oil.
2. Using a stand mixer (with paddle attachment) or hand mixer, on medium speed, beat Shortbread Cookie Mix with butter and water for 2–3 min or until a soft, uniform dough forms.
3. Using a 4-in-1 Spice Spoon, divide between 30 wells in Perfect Petites, about 1⁄2tbsp per well. Using the back of the spoon, press evenly into wells.
4. Bake for 15 min, shortbread will have risen, but still be soft.
5. In a medium bowl, whisk eggs. Add Luscious Lemon Curd Mix and water; whisk until well combined. Transfer mixture to a spouted measuring cup. Pour into wells over pre-baked shortbread. Fill to the top of each well.
6. Bake until the top is set and no longer jiggles when you move the pan, about 15 min. Cool in pan until room temperature. Gently pop out bars and dust with icing sugar, if desired.

In his sermon “Solving Our Problems Through Prayer,” Dr. Stanley says that God isn’t upset by our doubts and fears and anxieties; He cares about our problems. In fact, the Scriptures reveal God as one who seeks the lost, welcomes the lonely, and heals the sick. He comforts the afflicted, gathers the outcasts, and provides for the destitute. He's a patient, loving Father who races to meet the prodigal. He is the victor over death, setting the captives free. To say God is interested in what troubles you is to say that His heart is to be with you—a fact made clear by His incarnation, crucifixion, and the conquering of hell, as proven by His resurrection. Knowing there’s nothing we can say or do to deter His love—that there’s no length He’s unwilling to go to in order to be with us—should encourage us to run to Him the way a young child runs to his mother concerning every delight or terror, no matter how mundane or minor. The Lord’s instructions and invitation are one and the same—and they couldn’t be simpler or more profound: “Come to me, all who are weary and burdened, and I will give you rest. Take my yoke upon you, and learn from me, for I am gentle and humble in heart, and you will find rest for your souls. For my yoke is comfortable, and my burden is light” (Matt 11:28-30). Come—that's how it all begins, and how it all ends. Come tell Him everything and find the life you’ve always wanted. Find the Love that makes all things new.
