Thick cut baked fries. Tried a new technique in baking fries. They turned out crispy on the outside and tender (not mushy) on the inside. They are oh so yummy!

2 pounds Yukon gold potatoes
Non-stick cooking spray
3 T. vegetable oil
3 T. cornstarch
3/4 cup water
salt

Cut sliver off of both ends on long side of potatoes. Cut in half long wise and then cut each half into steak fries.

Coat a sheet pan with cooking spray. Add vegetable oil and tip to coat pan (cooking spray allows oil to evenly coat the whole pan).

Put cornstarch and water in large bowl and whisk until combined. Microwave 30 seconds at a time, mixing in between, until it becomes a thick paste (total cooking time 1-3 minutes)

Put potatoes in cornstarch mixture and mix well with hands until coated evenly.

Lay potatoes in single layer on sheet pan, cover with foil coated with cooking spray and bake in oven preheated to 425 ° F for 12 minutes. Remove foil and bake 18 minutes. Turn potatoes over and bake another 18 minutes until browned.

Remove from oven and salt hot potatoes on sheet pan. Remove from sheet pan and blot off excess oil. Serve and enjoy!

Well this was delicious! I made maple glazed tofu with bok choy from the Mealime recipe app for my Culinary Nutrition course. It's crazy good. I highly recommend this app for meal planning.
