Join us for Walk with a Doc – a FREE community walking program! Each event is led by local physicians and is open to people of all ages and abilities. The program allows participants to safely take a walk, learn about current health topics, and meet new people. We hope to see you at our next walk!

We meet the 3rd Saturday of each month at 9:30am at Buckland Park. Our next walk is 9/20/25!

With the concerns about rising grocery prices, I have decided to do a series on inexpensive recipes using plant-based ingredients.

If you are looking to eat nutritious food on a budget-this series is for you!

The next recipe in the series is Vegan Niçoise Salad 😍.

Using in season produce like tomatoes makes this dish taste amazing and also helps save you on groceries!

Vegan Niçoise Salad:
-1 lb red potatoes
-4 Persian cucumbers
-12 oz green beans
-12 oz cherry tomatoes
-15oz can chickpeas
-6 oz pitted Greek Kalamata olives
-8oz marinated artichokes

1. Bring large stock pot with water to a boil.
2. Place cleaned potatoes into pot and boil for 20-30 minutes until fork tender and then drain.
3. Add green beans to boiling water at 15 minutes and boil approximately 10 min. Remove from water and run cold water over green beans.
4. Drain chickpeas and set aside.
5. Chop cucumbers and tomatoes and set aside.
6. Divide into 4 portions. You can use the marinade for the artichokes as a dressing or alternatively you can use artichokes in water and make your own dressing. Enjoy!

With the concerns about rising
grocery prices, I have decided to do a series on
inexpensive recipes using plant-based ingredients.

If you are looking to eat nutritious food on a
budget-this series is for you!

The next recipe in the series is Mushroom Black Bean Tacos 😍

Mushroom Black Bean Tacos: 🌮
-8 oz shiitake mushrooms sliced
-15oz can black beans drained
-1/2 cup onions diced
-3 garlic cloves minced
-1 tbsp taco seasoning
-1 jalapeño seeded and diced
-8 corn tortillas

Toppings:
-avocado
-salsa
-cilantro
-tomatoes
-lettuce

1. In medium saucepan place onion & garlic over medium heat and stir about 5 min until fragrant.
2. Add mushrooms, black beans, jalapeño an taco seasoning and stir over medium heat for 10-15 min until mushrooms are browned.
3. Assemble tacos using your favorite toppings & Enjoy!

The next recipe in the series is Strawberry Rhubarb Compote 😍.
Strawberry Rhubarb Compote:
-16 oz strawberries halved (fresh or frozen)
-16 oz rhubarb chopped (roughly 4 stalks)
-1 tbsp maple syrup
-1 tbsp water

1. Chop strawberries & rhubarb and place into saucepan over medium heat.
2. Add water & maple syrup. Bring to boil then simmer 8-10 minutes until thickened.
3. Let cool. You can use mixture to top overnight oats (pictured here), toast or even ice cream! Enjoy.

We had a great first Walk with a doc event on 8/16/25 where we discussed the topic of Lifestyle Medicine!

Lifestyle medicine is an evidence-based medical specialty that uses therapeutic lifestyle interventions to treat, reverse, and prevent chronic conditions including high blood pressure, high cholesterol, diabetes, cardiovascular disease, obesity, mood & anxiety disorders, autoimmune conditions and certain cancers including breast, prostate and colorectal cancers.

Our next walk is 9/20/25 at 9:30-10:30a at Buckland Park. We will have a guest Walk Leader joining us discussing the health benefits of WWAD. Please feel free to share with anyone who is interested (flyer attached). Would love to see you there!
