Turned this weekends leftover smoked chicken into a bunch of chicken stock, and whipped up some chicken & dumplings. Bubbling away perfectly. Are you team drop biscuit or team rolled & cut biscuit? Are chicken & dumplings the same as chicken & biscuits? I realized tonight I use the terms interchangeably 🤔
Finally warm enough to cook dinner outside tonight! I made some brioche buns earlier today & kept it simple. Yes, we have a grill, but I want to cook more meals over an open fire this year 🔥

Three tips to eat more salad 🥗
First, make your own dressings! My favorite is with flavored balsamic vinegars. Generally, I mix a 50/50 ratio of something acidic (vinegars, lemon juice, orange juice) with an oil (avocado, olive, grape seed) and then add a pinch of salt, fresh black pepper, and some garlic & onion powder. Sometimes I add a touch of sweetness with local honey or maple syrup, a punch of cayenne, or maybe dried herbs. Sometimes some fresh grated garlic or ginger. Or maybe I’ll mash up fresh fruit like raspberries or strawberries. Play around with flavors you love & you’ll never be bored with bottled dressing again.
3 combos to try: 1-equal parts oil/vinegar of choice, generous black pepper, pinch of salt, onion powder and a little honey. 2- equal parts fresh lemon juice & oil, fresh garlic through a garlic press, pinch of salt. 3- equal parts orange juice & oil, pinch of salt & pinch of cayenne pepper, and some maple syrup.
Second, change up your greens each week. Mixed greens one week, romaine the next, iceberg the week after that. You get the idea.
Lastly, incorporate “big bowl salad night” each week. Just what it sounds like... Use a mixing bowl to make a big salad- top it with any random veggies you have and just have that for dinner.
