All the elements of a joy filled weekend. Started with a beautiful walk Saturday morning. Followed by a family filled birthday celebration for my mom’s 80th. A Sunday Brunch at my sister’s house and finished with homemade Chickpea Chocolate cookies
Recipe complements of
1can chick peas
1 ripe banana
1/4 cup pitted dates
2tbsp cocoa powder
Optional 3 tbsp PB powder (I used real peanut butter and added 2 teaspoons Himalayan Tartary buckwheat sprout powder)
Blend all together until smooth . Shape into balls and put on a baking sheet. Flatten them gently and bake at 350°F for 15 to 20 minutes. You can let them cool for 10 minutes and if you’d like, melt some dark chocolate chips with a little bit of coconut oil. And top with this melted chocolate mixture. Cool and they are ready to eat.

Today’s lunch was homemade kale chips + two soups combined. One of the recipes is in the picture :Dr Furman’s quick kale and white bean stew. I had some leftover carrot ginger soup that I purchased at Lori’s natural foods that I mix together with it. I also had some arugula sprouts that I decided to garnish it with. Just for fun, I added h**p seeds for added protein.
The recipe for the homemade kale chips, I found online . You wash the kale leaves and use one or two bunches of leaves pulled apart into the size of chips. Put them in a bowl; drizzle 2 tablespoons of olive oil over top and then sprinkle 1/4 cup of nutritional yeast; massage the oil and nutritional yeast into the leaves, then place them on a baking sheet Covered with parchment paper (unbleached). Bake at 200°F for 45 to 60 minutes. For those who have never tried it, it may look a little funny with the nutritional yeast, but it tastes cheesy and delicious!

This morning’s breakfast sandwich included a homemade Flax English muffin containing almond butter, ground flax, egg, soy milk and baking soda. I made some homemade guacamole with lime, garlic, onion fresh cilantro from the garden. Topped it off with a homegrown tomato some greens from the garden and broccoli sprouts.

First time at making purple potatoes. I learned on the Mel Robbins show with Dr Mussallem that purple potatoes have more anthocyanin antioxidants than blueberries do. As a cancer survivor, she eats them every day. I went to my health food store today, purchased some, and I cooked them in an instant pot mini. The only thing I added, was one cup of water. The cooking time was 32 minutes. They tasted so sweet and delicious and needed nothing for a garnish.
