ORANGE ROASTED CHICKEN
INGREDIENTS:
1 whole chicken (about 4-5 pounds)
2 large oranges, zested and juiced
4 cloves garlic, minced
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
1 tablespoon fresh rosemary leaves (or 1 teaspoon dried rosemary)
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup chicken broth
1 tablespoon raw honey
Extra orange slices for garnish
INSTRUCTIONS:
Prepare the Marinade: In a small bowl, combine the orange zest, orange juice, minced garlic, thyme, rosemary, salt, and pepper. Mix well to create a marinade.
Marinate the Chicken: Place the whole chicken in a large resealable plastic bag or a large dish. Pour the marinade over the chicken, making sure it’s well-coated inside and out. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to pe*****te the meat.
Preheat the Oven: Preheat your oven to 375°F (190°C).
Roast the Chicken: Remove the chicken from the marinade and place it in a roasting pan. Pour the chicken broth into the bottom of the pan to keep the chicken moist while roasting. If desired, place a few orange slices inside the cavity of the chicken for extra flavor. Brush the outside of the chicken with honey for a beautiful glaze.
Bake: Roast the chicken in the preheated oven for about 1 1/2 to 2 hours, or until the internal temperature reaches 165°F (74°C) when measured at the thickest part of the thigh. Baste the chicken occasionally with the pan juices to keep it moist and flavorful.
Rest and Serve: Once the chicken is fully cooked, remove it from the oven and let it rest for 10 minutes before carving. Garnish with extra orange slices and fresh herbs if desired. Serve the orange roasted chicken with your favorite sides and enjoy!
