Healthy eating doesn’t have to feel overwhelming or bland. At Rockford Weight Loss we keep it simple with real, whole foods that support real progress. Give this easy recipe a try 👇

🍋 Lemon-Herb Chicken & Greens Plate

Weight-loss phase friendly • Anti-inflammatory • Clean ingredients

Ingredients
16 oz chicken breast
2 cups fresh spinach (or mixed greens)
1 small zucchini, sliced
½ red bell pepper, sliced
1 clove garlic, minced
1–2 tbsp fresh parsley, chopped (optional)
Juice of 1 lemon
Sea salt, to taste
Black pepper, to taste
1 tsp dried Italian seasoning
¼–½ cup chicken broth or water (for cooking — no oil)

Instructions

Cook the Chicken
Lightly season chicken with salt, pepper, and Italian seasoning. Place chicken in a skillet with ¼–½ cup broth or water.

Cover and simmer on medium heat 12–15 minutes, flipping once, until cooked through. Remove from pan and slice into strips. (Add a tablespoon of extra broth if liquid evaporates — do not brown in oil.)
Cook the Vegetables
In the same pan, add garlic, zucchini, and bell pepper. Add a splash of broth if needed. Cook 5–7 minutes until tender. Add spinach last and cook 1–2 minutes until just wilted.

Combine & Finish
Return sliced chicken to the pan. Squeeze fresh lemon juice over everything. Sprinkle parsley if using. Adjust salt & pepper
