Carrot and Walnut Loaf 🥕

Warm, gently spiced, and full of good things. This wholesome loaf is a springtime favourite that works beautifully as a shared baking activity. Walnuts are a rich source of omega-3 fatty acids, which support brain health, making this as nourishing as it is delicious. ✨

Ingredients
🥕 2 cups grated carrots
🥕 2 eggs
🥕 1/2 cup honey or brown sugar
🥕 1/2 cup neutral oil
🥕 1 1/2 cups all-purpose flour
🥕 1 tsp baking soda
🥕 1/2 tsp baking powder
🥕1/2 tsp salt
🥕 1 tsp cinnamon
🥕 1/4 tsp nutmeg
🥕 3/4 cup chopped walnuts
🥕 Zest of 1 orange (optional but lovely)

Instructions
✅ Preheat oven to 350°F (175°C) and grease a loaf tin
✅ Whisk together eggs, honey, and oil in a large bowl
✅ Stir in grated carrots and orange zest
✅ In a separate bowl, combine flour, baking soda, baking powder, salt, and spices
✅ Fold dry ingredients into wet until just combined
✅ Stir in chopped walnuts
✅ Pour batter into the prepared tin and smooth the top
✅ Bake for 45 to 50 minutes until a skewer comes out clean
✅ Cool in the tin for 10 minutes before turning out
✅ Slice and serve warm or at room temperature, lovely with a little butter 🧈
