๐ฟ GLP-1 Friendly Brunch Idea: Savory Egg & Veggie Mini Muffins
Perfect for a cozy weekend brunchโhigh-protein, low-carb, and easy on the stomach while on Semaglutide or Tirzepatide.
Ingredients (Makes 6 muffins)
4 large eggs
ยผ cup egg whites
ยผ cup reduced-fat shredded cheese (optional)
ยฝ cup finely chopped spinach
ยผ cup diced bell pepper
ยผ cup diced onion (optional)
Salt & pepper to taste
Non-stick spray
Instructions
Preheat oven to 350ยฐF.
Spray a muffin tin lightly with non-stick spray.
Whisk eggs, egg whites, salt, and pepper together.
Add spinach, bell pepper, onion, and cheese if using.
Pour the mixture evenly into 6 muffin wells.
Bake 18โ20 minutes, or until set.
