Easy Oven Baked Chicken Thighs in just 35 minutes with Season Rice and Fresh bread with a veggie salad 487
Ingredients
8 chicken thighs bone-in, and skin-on
2 Tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
½ teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried parsley

Instructions
PREP OVEN AND BAKING DISH:
Preheat the oven to 400 degrees and prepare a 9x13-inch baking dish with a light coating of cooking spray.
PREP CHICKEN:
Brush olive oil over the chicken thighs.
In a small bowl, combine the salt, pepper, paprika, garlic powder, and parsley.
Sprinkle the seasoning blend over both sides of the chicken thighs and place them on the prepared baking sheet.
BAKE:
Bake in the preheated oven, uncovered for 30-40 minutes or until the internal temperature reads 165 degrees.

▢2 tablespoons butter divided
▢¼ cup onion finely minced
▢2 cloves garlic minced
▢2 cups beef broth or chicken broth
▢2 tablespoons soy sauce
▢1 teaspoon Worcestershire sauce
▢1 teaspoon dried parsley
instructions
Place rice and 1 tablespoon butter in a saucepan with a lid. Heat over medium-high heat until the rice starts to slightly brown.
Add onion and garlic, and cook 2-3 minutes or until slightly softened.
Add remaining ingredients (except butter) and stir. Bring to a boil over medium-high heat, cover, and reduce heat to a simmer.
Cook 20 minutes, do not open the lid.
Remove from the heat (without opening the lid) and let rest for 5 minutes.
Open the lid, add the remaining butter, and stir. Fluff with a fork, taste, and season with additional salt & pepper if desired.

How to Season Rice
Seasoned rice tastes best when the seasoning is cooked into the grains instead of mixed with them.

Cook the rice in a little bit of butter until slightly browned. Add onion & garlic, and cook, until softened.
Add remaining ingredients, cover, & cook (per the recipe below).
Remove from heat & let rice rest for about 5 minutes.
Once the rice has cooked and rested, gently fluff up the grains with a fork. Season with additional salt & pepper to taste.

Pork Meatballs & Orzo Pasta with Calabrian-Tomato Sauce Fennel Seeds & Veggie Salad 488

INGREDIENTS
10 oz Ground Pork
4 oz Orzo Pasta
2 Scallions
1 Fennel Bulb
¼ cup Grated Parmesan Cheese
1 Tbsp Sherry Vinegar
¼ cup Panko Breadcrumbs
1½ tsps Calabrian Chile Paste
6 oz Or 2 Tbsps Tomato Paste
1 Tbsp Italian Seasoning (Whole Dried Basil, Sage, Oregano, Savory, Rosemary, Thyme & Marjoram)
salt and pepper
1 cup of water

INSTRUCTIONS

1. Prep the ingredients
Fill a medium pot 3/4 of the way up with salted water; cover and heat to boiling on high. Wash and dry the fresh produce. Thinly slice the scallions, separating the white bottoms and hollow green tops. Cut off and discard any stems from the fennel, then halve, core, and medium dice the bulb.

2. Form & brown the meatballs
In a bowl, combine the pork, breadcrumbs, and Italian seasoning. Season with salt and pepper; gently mix to combine. Shape the mixture into 10 tightly packed meatballs. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the meatballs. Cook, turning occasionally (carefully, as the oil may splatter), for 5 to 7 minutes, or until lightly browned on all sides.

3. Cook the pasta
Meanwhile, add the pasta to the pot of boiling water. Cook, stirring occasionally, for 7 to 9 minutes, or until tender. Drain thoroughly.

4. Finish the meatballs & serve your dish
Add the diced fennel to the pan of browned meatballs; season with salt and pepper. Cook, stirring occasionally, for 2 to 3 minutes, or until slightly softened. Add the sliced white bottoms of the scallions. Cook, stirring frequently, for 1 to 2 minutes, or until softened. Add the vinegar (carefully, as the liquid may splatter). Cook, stirring frequently and scraping up any browned bits (or fond), for 30 seconds to 1 minute, or until the liquid has cooked off. Add the tomato paste (if you received 6 oz, use 1/3 of the tomato paste), 1 cup of water (carefully, as the liquid may splatter), and as much of the chile paste as you'd like, depending on how spicy you'd like the dish to be; season with salt and pepper. Cook, stirring occasionally, for 4 to 5 minutes, or until the sauce is thickened and the meatballs are cooked through. Turn off the heat. Taste, then season with salt and pepper if desired. Serve the finished meatballs and sauce over the cooked pasta. Garnish with the cheese and sliced green tops of the scallions. Enjoy!

A sweet-and-savory glaze elevates the humble pork chop to weeknight staple status, especially when paired with crisp-tender broccoli or Brussel sprouts and roasted sweet potatoes.

Ingredients 3
medium sweet potatoes, peeled, cut into 1-inch pieces (about 4 cups)
2 tablespoons olive oil
1 1/4 teaspoons salt
1/2 teaspoon pepper
1/2 lb fresh broccoli florets (about 4 cups)
4 boneless pork chops (about 3/4 inch thick)
3 tablespoons honey
1 tablespoon whole-grain Dijon mustard
2 teaspoons balsamic vinegar

Instructions
1. Heat oven to 425°F. Spray an 18x13-inch rimmed sheet pan with cooking spray.
2. In a large bowl, mix sweet potatoes, 1 tablespoon of the oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Stir to coat. Place on pan.
3. In the same bowl, mix broccoli, the remaining 1 tablespoon of oil, and 1/4 teaspoon of salt. Remove pan from oven; stir or turn potatoes, and arrange Brussel sprouts on the pan with potatoes. Bake both for 25 minutes.
4. Meanwhile, season pork chops with the remaining 1/2 teaspoon salt and the remaining 1/4 teaspoon pepper.
5. In a small bowl, mix honey, mustard, and vinegar. Reserve 2 tablespoons of the honey glaze.
6. Remove pan from oven; add pork chops to pan. Brush pork chops with the remaining honey glaze. minutes or until pork is no longer pink and meat thermometer inserted in the center reads at least 145°F, and vegetables are browned and tender.
7. Spoon reserved 2 tablespoons honey glaze on pork chops. Serve pork chops with vegetables.

Chicken Cooked In Spinach & Bacon Cream Sauce

Easy & Simple Weeknight Chicken Recipe | Chicken Cooked In Spinach & Bacon Cream Sauce

INGREDIENTS
10 slices bacon
1 oz. (8-oz.) block cream cheese, softened
1/3 c. mayonnaise
1/3 c. sour cream
1 tsp. garlic powder
1 tsp. paprika
1 lb. frozen chopped spinach, thawed and squeezed of excess liquid
1 c. freshly grated Parmesan
1 c. shredded mozzarella, divided
1 baguette, sliced and toasted, or mini rye bread

DIRECTIONS
Preheat the oven to 350°. In a large nonstick skillet over medium heat, cook bacon until crispy, 8 minutes. Drain on a paper towel-lined plate, then chop.
In a large bowl, stir together cream cheese, mayonnaise, sour cream, garlic powder, and paprika, and season with salt and pepper. Fold in chopped spinach, bacon, Parmesan, and 3/4 cup mozzarella.
Transfer dip to a baking dish and sprinkle with the remaining 1/4 cup mozzarella. Bake until golden and bubbly, 25 to 30 minutes.
Serve with crostini or rye bread.

Ingredients
One muffin tin
One Box of lasagna noodles
Ground beef
Bread crumbs,
milk,
salt
pepper
half a teaspoon Worcestershire sauce
onion
One egg

Instructions
soak lasagna rolls in the water.
Make ground beef meatball mix.
Put the meatball in the middle of a lasagna noodle and roll it up.
Optional, wrap bacon around it.
Put it in a muffin tin HOLE.
Pour pasta sauce over each one.
Sprinkle with cheese.
Bake in the oven. 400°F Bake uncovered for 20 minutes or until temperature reaches 160°F and no longer pink in the center.

Ingredients
For the chicken:
6 to 8 Chicken thighs, bone-in, and skin on
1 Tbsp of Chicken Bouillon Powder
2 tsp of Dried Oregano
2 tsp of Granulated Garlic
1 Tbsp of Your Favorite All-Purpose Seasoning
1 Tbsp of Dijon Mustard
3 cloves of Garlic, grated
1 Sprig of Rosemary
1 Lemon
1 Tbsp of Olive Oil
Salt and Pepper to taste
1 cup of Chicken Stock
2 Tbsp of Butter

For the rice:
1 cup of Long Grain Rice, rinsed
1 Tbsp of Butter
1 3/4 cup of Chicken Stock
1/4 tsp of Dried Basil
1/2 tsp of Paprika
1/2 tsp of Granulated Garlic
Salt, to taste

Preparation
1) Preheat your oven to 425 degrees.

1) In a bowl, add the chicken along with the bullion, oregano, garlic, seasoning, mustard, oil, salt, pepper, and juice of 1/2 of a lemon, massage it all into the chicken then place the chicken in a 9x13� roasting pan, pour the stock around the chicken, juice the other half of the lemon around the chicken, dot butter all over and give the top of the chicken one last dusting of seasoning, pop it in the oven for about 40 to 45 minutes.

3) Meanwhile, make the rice. In a saucepan over medium heat, add the butter, once melted add the rice and cook for 2 minutes, add the stock and spices, bring to a boil, cover, reduce the heat to low and cook for about 15 to 18 minutes or until done. Remove from the heat, remove the lid and let it sit undisturbed.

4) Scoop some rice onto a plate, top with the chicken, and spoon over some of the sauce, add a bit of parsley and enjoy!

Lemon helps add flavor and tenderize the chicken, but if left for too long, it will actually start breaking down the proteins way too much, resulting in a tough, rubbery, or even mushy texture. For even cooking, pound chicken breasts to about ½ inch thick evenly. Remember to zest the lemon before squeezing it.
