This week we’re spotlighting Julia, one of our most dedicated chefs and a true heart of our kitchen! 🇲🇽✨

Julia has brought recipes built fully by hand at the Kitchen Takeover this week ~ if you haven't tried it, today is your last chance!

Born on the Mérida Yucatán Peninsula, Julia (Native name: Julia Patricia Flores Bernal) grew up watching her mom, Patricia Bernal, host a local cooking show and run a catering business. That’s where her love for mixing flavors and creating comforting food began.

Julia has lived in Arkansas for 26 years and has been part of our dining team for almost 12 years. She came to America to build a safer, better life for her family, and as a single mom of two incredible kids, they are her daily motivation.

She loves seeing students happy, believes food brings people together, and pours her heart into everything she makes.

Inspired by the traditional Mexican method of slow-cooking meat over an open fire, this tender top round is braised in a pepper sauce that celebrates centuries-old culinary roots.

🌮 Chicken Mole Verde Tacos
Chicken Mole Verde Tacos with Grated Cojita Cheese and Gaucamole

🍜 Sopa de Fideo
A nostalgic comfort soup made with toasted fideo noodles simmered in a tomato broth. A dish with Spanish colonial roots and homestyle heart.

🍴 Chef Circle: Kitchen Takeover with Chino 🇳🇬

It’s a Kitchen Takeover! This week’s Chef Circle highlights Chino, our chef who is an international student here at ATU. Chino is from the Igbo tribe of Southeastern Nigeria, and moved to America with his family. This week he is bringing the vibrant flavors of West Africa to our kitchen, available Monday, Wednesday and Friday.

🌍 This Week’s Menu – “As Close to Home as Possible”

🔥 Nigerian Red Chicken
A rich, spicy dish often served at weddings and ceremonies. Marinated in a blend of ginger, garlic, paprika, chili peppers, and habaneros, this is West African comfort food at its finest.

🍚 Jollof Rice
A legendary West African favorite! Countries across the region proudly claim their own version, but today’s is made the Nigerian way… bold, smoky, and packed with flavor.

🍌 Fried Plantains
Crisp and caramelized on the outside, soft and sweet on the inside. Plantains grow abundantly across Nigeria and are a staple side dish for many meals!

🥗 Fruit Salad
A refreshing mix featuring pineapple and other native tropical fruits, offering a bright, sweet balance to the spiced dishes.

🌶️ Spicy Vegetables
A collection of North African–inspired vegetables and spices, blending warmth, depth, and heat.

River Valley Shelter for Battered Women & Children, Inc. needs our community's support to continue providing vital resources to survivors of domestic violence. Together we can step up and help make sure that help is still there when it's needed most.

We're collecting:
🥫Non perishable foods
🧴Toiletries & hygiene items
🧹Cleaning supplies
🧥Clothing and blankets
🏡Any household essentials

If you'd like to donate, donation boxes are available in your residence hall lobby all month long, or can also be brought to the FoodAtATU marketing office (near the southeast entrance of the Chambers Dining Hall).

💜 It’s , a day to stand together for Domestic Violence Awareness Month. It’s a reminder to stand with survivors, raise awareness, and help strengthen the support systems that keep our communities safe.

It’s been inspiring connecting with so many of you this month as we work together to support our community through these challenging times following recent funding cuts for shelters and local programs. Your compassion and commitment truly make a difference.

We are so proud of our partnership with Manna House of Russellville to provide weekly food donations, which in turn helps provide meals to domestic violence shelters in our area (such as River Valley Shelter for Battered Women & Children, Inc.) and to all families in need.

A huge thank you to Jordan Turner, our FoodAtATU Catering Director, for leading this initiative with Manna House, and making sure our campus dining services give back every single week.
