Leaves are changing colors, chill in the air ... this means it's soup season!
Cream soups can be a calorie bomb ... add riced cauliflower and blend it to get a cream type soup without the added fat and calories.
Use bone broth as the base and you go from 1 g protein per cup to 7 g protein!
Here's a WWC KIDS seasonal favorite that is rich in antioxidants. Give it a fun name like Jack O Lantern surprise to get the kids on board.
Roast the pumpkin seeds after you carve out your pumpkin, roast in the oven with a few herbs and sea salt and add to this soup, salads or lunch box snacks.
Change to bone broth and cut the coconut milk to 1/2 cup. Get fancy and serve it in a hollowed out pumpkin!
Plan to serve this on Thanksgiving for a healthy, filling start to the meal that will help you cut down on those high carb sides!

Low Carb Pumpkin Soup with lower net carbs than regular pumpkin soup so it fits well with low carb and keto diets. It's paleo and whole30 too.
