Roast the pumpkin seeds after you carve out your pumpkin, roast in the oven with a few herbs and sea salt and add to this soup, salads or lunch box snacks.
Change to bone broth and cut the coconut milk to 1/2 cup. Get fancy and serve it in a hollowed out pumpkin!
