Busy mornings call for simple, nutrient-packed meals you and your kids will actually eat. These muffins are a grab-and-go option loaded with protein, healthy fats, and vitamins to keep our minds sharp and bodies energized. Make these ahead of a busy week and enjoy an easeful morning.
Recipe (Makes 4 servings):
2 tsp avocado oil
1 lb grass-fed sirloin steak
12 pasture-raised organic eggs, whisked
1 medium organic sweet potato, chopped into small cubes
Sea salt & black pepper, to taste
Preheat oven to 375°F (190°C).
Line a muffin tray with paper liners or use food-grade silicone.
Heat oil in a pan over medium heat.
Cook steak ~5 minutes per side, or until desired doneness.
Slice into small pieces.
In a bowl, whisk eggs.
Add steak, sweet potato, salt, and pepper.
Stir to combine.
Divide evenly into muffin cups and bake 30 minutes, until golden on top.
