Pandan Sesame Balls


Custard Filling:
* 1.5 ml coconut milk
* 3 tbsp condensed milk
* 1/4 cup cornstarch
* 1/2 cup pandan juice
* 2 egg yolks
* 1/4 tsp salt
* 1/4 cup sugar
* 1/4 tsp pandan extract or green food coloring (optional)

Dough:
* 3 cups glutinous rice flour
* 1 cup mashed potatoes
* 1 1/4 cups boiling-hot water
* 1 tbsp pandan extract
* 1/2 cup sugar

Instructions:
1. Combine all the filling ingredients in a pan. Cook over medium heat, stirring constantly, until the mixture thickens and no longer sticks to the pan. Refrigerate for 1 hr to cool completely.

2. In a large bowl, mix all the dough ingredients until smooth and well combined.

3. Take a small piece of dough, flatten it, and place a spoonful of the cooled custard filling in the center. Wrap the dough around the filling and shape it into a ball. Dip the ball in water, then roll it in sesame seeds to coat.

4. Repeat the process until all the dough and filling are used up.

5. Fry at 250Β°F until crispy.
