The pounds kept creeping on year after year despite her consistent enthusiasm for jogging and Zumba. It wasn't until she understood and committed to remove processed “food” products and vegetable oils from her diet and focus on whole grains, fruits, vegetables, and legumes that she finally won her battle of the bulge. And after watching friends and family suffer from terrible diseases known to be avoidable—often reversible—by simply eating whole foods, staying silent was no longer an option. New study finds that those eating vegan diets have biomarkers associated with a lower risk for cancer, heart disease, and hypertension. The vegan group also had higher levels of omega-3s and carotenoids and isoflavones associated with lower inflammation.

People following vegan diets are less likely to develop chronic diseases, compared with other dietary groups, according to a study funded by the NIH/National Cancer Institute.
