Cauliflower crust 🍕 sounds healthy — and it can be — but the store-bought or restaurant versions are often less virtuous than advertised.

Here’s why it can be unhealthy:

1. It’s rarely “just cauliflower.” 🥔 🍚
Most commercial cauliflower crusts contain starches like potato flour, rice flour, or tapioca starch to bind the crust and give it structure. These can spike blood sugar just like refined wheat.

2. Higher in calories than expected. 🧀
Cheese, oils, and starch binders can make one slice of cauliflower crust higher in calories than a traditional thin-crust pizza. You’re often swapping bread carbs for fat-heavy fillers.

3. Hidden sodium.🧂
To boost flavor, manufacturers load the crust with salt — some have more sodium than the pizza toppings themselves.

4. Processed ingredients. 😵
Pre-made crusts can have preservatives, gums, and stabilizers that aren’t exactly whole-food-friendly.
