Simple Low FODMAP Corn Salsa ✨ This recipe needs a spot on my blog but…it hasn’t happened yet. 🙈 So here it is again. When you want salsa but don’t have fresh tomatoes - this is the perfect option! Eat it as a snack, top your tacos, throw it onto a taco salad - no rules here as long as it gets in your belly 🙃 This makes 5 Low FODMAP servings!
Ingredients 🌱
1 cup of frozen sweet corn, thawed
1 large jalapeño, minced
2 tbsp packed chopped cilantro
2 tbsp packed chopped green onion tips
1 tbsp fresh lime juice
3/4 tsp white wine vinegar
3/4 tsp garlic-infused oil
salt & pepper to taste
Method ✨
✔️ Mix all ingredients together and adjust lime/salt/pepper to desired preference. Enjoy! 🥰
❗️1 cup of corn is a little more than 5 ounces. A Low FODMAP serving is 1.34 ounces.
