Peanut Butter Chocolate Hearts 💕 Just in time for Valentine’s Day 🩷

- 1/2 cup natural peanut butter (I get mine at Costco) - could also use Almond Butter
- 1 tablespoon almond flour
- 2 tablespoons maple syrup
- dark chocolate chips - I didn’t measure …. Just melted what I thought I needed …. If I guessed I’d say about 1/2 cup and just melt more if you need more)
- sea salt to sprinkle on top (optional)

These are no bake so kinda quick and definitely easy! And definitely a better for you treat than anything store bought.

Mix the PB, maple syrup, and almond flour in a bowl. Should be smooth and workable. Place in the fridge for 30 mins or freezer for 15-20 mins to stiffen it up a little

1. Put parchment paper on a cookie sheet and press the PB “dough” out

2. Use a heart cookie cutter. Repeat until you have all your hearts made. Place in fridge again.

2 Melt your chocolate. Once melted take your hearts out of the fridge and I used a spoon to spread the chocolate on top and then sprinkle sea salt on top if you’d like.

OR

If you don’t have heart shaped cut outs (or a lot of time) you can also make these using a mini muffin tin. Not as cute, but they still taste good 😂

Store these in the refrigerator! Enjoy 😋 🩷

I LOVE Artichokes!!! Anyone else?!

You can cook them in the oven, or you can cook them in the instapot.

Cut the bottom stem off and a little off the top. Open as much as possible (optional to stuff with onions and/or garlic).

Pressure cook for 20 mins.

I love dipping the artichokes in homemade garlic aioli. Here’s the recipe:

1 1/3 cup cashews (soak in hot water for 20 mins)

Once cashews are soaked, strain them and toss them in the blender with….
- 3-4 garlic cloves
- 1 teaspoon salt
- 3/4 cup water
- 2 tablespoons lemon juice

Blend until smooth …. Chill and serve. Enjoy 😋 Also works well for dips or dressing.

Homemade Dressing!

SO quick, easy, and so much better for you. Store bought dressings are full of seed oils (canola oil, soybean oil, sunflower oil, grapeseed/rapeseed oil). It can be hard to find a dressing that doesn’t have seed oils plus a million ingredients.

Garlic Tahini Dressing (takes 5 mins)

- 1/2 cup tahini (I use the Soom brand and buy it on Amazon)
- 2/3 cup water
- 1 tablespoon maple syrup
- 1/2 cup lemon juice
- 2-4 garlic cloves
- 1 teaspoon salt

Blend all in a blender and viola you have dressing. Store in the fridge.

Potato Leak Soup - one of our favorites 😋

- 3 lbs yellow potatoes (I don’t peal)
- 4 leeks (white part only)
- 3 garlic gloves
- 5-6 cups broth? I didn’t measure 😅
- 2 teaspoons thyme
- 2 tablespoons butter
- 1 teaspoon salt

Boil potatoes and leeks and strain when done.

I then add broth and the potatoes, leeks, garlic and salt + thyme to blender and blend. I usually have to do this in 2 batches.

Once blended, I stick it all in a pot with the butter and heat on low so it doesn’t burn in the bottom. Enjoy!

Last night we made quinoa pizza crust! It is so easy, healthy, and delicious 😋

For 1 pizza

Soak 1 cup quinoa over night

When you’re ready to make the crust:
- drain the quinoa

In blender add:
- the drained quinoa
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic
- 1/2 teaspoon powdered onion
- 1/4 teaspoon salt
- 1 tablespoon Italian seasoning
- 1/2 cup water

Blend about 30 seconds

Pour on parchment paper
Bake 425 for 25 mins
Takeout and “decorate” and cook for 7-10 more mins

We usually make 2 pizzas. We top one hummus and one with red pizza sauce…. Our toppings were onions, garlic, artichoke hearts, olives, bell peppers, and micro greens

No Bake Peanut Butter Cookie Balls

Easy and made with all real food!

- 4 cups oats (I use oats. These are free of glyphosate)
- 1 cup flax meal
- 2 cups natural peanut butter
- 1 cup maple syrup or honey
- 1 cup mini chocolate chips (these are dairy and gluten free)

I usually put the PB and maple syrup in a small pot on low just enough to where the PB isn’t clumpy from being in the fridge.

Then stir the PB maple syrup mixture, oats, and flax meal together and then mix in chocolate chips. I will put the mixture in the fridge for an hour or so. This allows the PB to harden a little and it will be easier to roll into balls. If you skip this step the mixture is pretty sticky 😅

This makes roughly 50 cookie balls. These don’t last long in our house 😂 If you want less cut the recipe in half.

These are excellent pre-run, post-run, sitting on the couch or as road snacks 😊

Happy New Year! It’s been a minute 😅

Today I made a batch of buckwheat waffles!! I love these as my breakfast before a long run!

Do you know about buckwheat?!
Buckwheat is a naturally gluten-free seed harvested from a flowering plant related to rhubarb, though it’s often used like a grain. It’s high in protein, fiber, and minerals, and contains rutin, a compound that may improve blood vessel health.

Recipe:

3 cups buckwheat
3 teaspoons baking powder
1.5 teaspoons salt
2 teaspoons cinnamon
3 eggs or 3 chia seed “eggs”
1/2 cup melted butter
3 teaspoons vanilla
3 cups water
2 tablespoons maple syrup (optional)

Mix dry ingredients and mix wet ingredients in separate bowls then combine and mix thoroughly….. I use about 1-1.5 cups of batter in the waffle iron.

Still obsessed with the holiday hash! This time I added some lentils, chickpeas, and arugula…. Seasoned with taco seasoning (something I also can’t seem to get enough off 😆😆) …. Anyway after it was cooked I put some in a bowl and added some pineapple salsa, dairy free sour cream, and avocado 🥑! SO good! Kinda like a taco bowl?! 🤷‍♀️ but it was delicious!! 😋

2 cups buckwheat flour
2 eggs (or 2 flax eggs)

Easy nutritious side dish!

- 2 bags cauliflower rice (got mine at Costco)
- 1 onion
- fresh spinach (I just tossed some in, didn’t measure)
- 1/2 cup nutritional yeast
- 1 tsp turmeric
- 1 tsp salt

- Caramelize the onions in some butter
- Toss in riced cauliflower and cook until softened
- add nutritional yeast, turmeric, and salt
- toss in spinach just long enough to get slightly cooked.

Sheet pan meals …. lazy edition 😂
I brought the Trader Joe’s sweet potato hash (fall hash?), which has sweet potatoes, red onions, butternut squash, celery, parsley, sage, rosemary and a bag of shredded brussel sprouts.
Season and roasted on 400* for 30 mins.
I tossed some black beans on it after it and it made the perfect meal! 😋
