INGREDIENTS
* corn kernels from 1 large steamed corn on the cobb, 1 cup
* 5 ounces diced avocado, from 1 medium
* 1 1/2 cup diced Persian cucumbers, about 3 small
* 1 cup halved cherry tomatoes
* 2 tablespoons diced red onion
* 2 teaspoons extra virgin olive oil
* 2 tablespoons fresh lemon juice, from 1 medium lemon
* 1/4 teaspoon kosher salt
* fresh black pepper, to taste

INSTRUCTIONS
* Toss all ingredients together and serve immediately. Enjoy!

TUSCAN TORTELLINI SALAD

INGREDIENTS:
1 lb. fresh cheese tortellini
1/4 c. extra-virgin olive oil
2 tbsp. balsamic vinegar
1/2 tbsp. honey
kosher salt
Freshly ground black pepper
3/4 c. chopped salami or prosciutto
1/2 c. baby spinach
1/2 c. oil-packed sun-dried tomatoes, chopped
1/4 c. freshly grated Parmesan

DIRECTIONS:
* In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to a large serving bowl.
* Make the dressing: Whisk together olive oil, balsamic vinegar and honey and season with salt and pepper.
* To bowl, add prosciutto, spinach, sun-dried tomatoes, and dressing and toss until well combined.
* Garnish with Parmesan.
