Fresh Fruit Salad 🍓🍍🍇 care of

A BIG bowl of fresh fruit for your parties & BBQ'S!

Ingredients (10 servings):
-1 lb fresh strawberries, hulled and chopped
-5 kiwi fruit, peeled and chopped
-1 small papaya, seeded and chopped
-1 small pineapple, peeled and chopped
-2 cups fresh blueberries
-2 cups seedless red grapes, halved
-fresh mint, chopped, optional

Dressing:
-juice and zest of 1 fresh lime
-1 Tbsp raw honey
-2 tsps pure vanilla extract
-1 Tbsp poppyseeds

Instructions:
-Using a sharp chef's knife, prep all of your fresh fruit.
-Add fruit to a large serving bowl.
-In a small jar, add all the dressing ingredients. Shake vigorously to combine.
-Pour your dressing over the fruit and gently toss to combine.
-Serve immediately or refrigerate for 1 hour.

SESAME TOFU POKE BOWL care of 🌈

Tofu shouldn’t be bland! When done right, tofu is a delicious protein alternative for a plant-based diet or for meatless meals 🙌🏼

🌱🥑🥕 This bowl is full of fibre and protein [veggies + edamame + tofu], healthy fats [avocado], whole grains [brown rice] and flavour! If you’re not a tofu fan, you could substitute chicken or chickpeas with the same marinade.

INGREDIENTS (makes 3 servings):
- 450g block firm tofu + 1 tbsp extra virgin olive oil to cook
- 1 tbsp extra virgin olive oil
- 1 tbsp sesame oil
- 2 tbsp reduced salt soy sauce
- 2 tbsp honey (sub maple syrup to make it vegan)
- 1 tbsp sesame seeds
- BASE for each bowl: handful spinach, chopped cabbage and grated carrot, 1/3 cup edamame (defrosted from frozen), 1/3 cup brown rice (I used precooked for convenience), pickled ginger and 1/4 avocado.

METHOD:
1️⃣ Drain tofu and press out water with paper towel. Cut tofu into 1-2cm cubes.
2️⃣ Heat a pan with 1 tbsp olive oil then add tofu, cooking on medium heat for approx 10 minutes or until golden brown and crispy. Flip regularly.
3️⃣ While cooking, combine marinade ingredients with a fork (olive oil + sesame oil + soy sauce + honey + sesame seeds). Add to tofu when it's ready and cook for 2-3 minutes, stirring often as it thickens.
4️⃣ Serve with colourful veggies and rice/sweet potato as above! Best eaten fresh. Can store in fridge for up to 2 days.
