Measured 1C of my “Mega Texas Caviar” salad approx 200-220g.
I prep chicken each week & top with 4 oz and boom, 35g of protein!

3 bell peppers, ½ onion, 2 C tomatoes, ½ bag coleslaw blend, 1 cucumber, 1 can corn, 1 can black beans & 1 garbanzo beans, bunch of cilantro, 2T chopped garlic, season w cumin, salt, pepper, taco seasoning, Tajin is great on top.

COMING SOON! I'm getting certified to be a 3 Pillars Coach & it starts with the 800g Challenge. 800g of fruit & veggies everyday, (6 cups). The plate on the left is a good example of what 800g looks like all at once. YOU get to choose. The total calories is approximately 400. Then add your proteins of choice, then your "fun" foods.

The mega salad this week, Greek style.
I’m still training to be a 3 Pillars Nutrition Coach.
We are working on the 800g challenge of fruits & vegetables everyday. I could eat this salad every day, and I just might!
1 bag of baby cucumbers (thats all they had at the commissary)
1 red, orange, & yellow bell pepper
3 C tomatoes
1/2 jar of Banana peppers & kalmata olives
1/2 sweet onion, a couple Tbsp of chopped garlic from a jar
1 can each of black beans & cannellini beans
Bunch or 2 Fresh parsley, 1/2 jar dried dill & Cavender’s greek seasoning & lemon juice. Serve with a slotted spoon if you are going for accurate weight.
Top with 4oz grilled chicken & 1 oz feta
