🍅 We’re nearing the end of tomato season! Make the most of these last few weeks with this fresh and flavorful salad with tomatoes. Tomatoes are packed with Vitamin C, potassium, folate, Vitamin K, and antioxidants, making this salad a nutritious and delicious way to enjoy the season's bounty.

Ingredients:
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lime juice
1 garlic clove, grated
1 teaspoon Dijon mustard
1 teaspoon sea salt
Freshly ground black pepper, to taste
1 can cooked black beans, drained and rinsed
2 cups sliced red cherry tomatoes
½ cup pickled red onions
1 cup grilled corn, cut from the cob
½ cup chopped fresh parsley

Instructions:
Make the Dressing: In a small bowl, whisk together olive oil, lime juice, grated garlic, Dijon mustard, sea salt, and freshly ground black pepper. Adjust seasoning to taste.
Prepare the Salad: In a large bowl, combine black beans, cherry tomatoes, pickled red onions, grilled corn, and chopped parsley.
Dress the Salad: Pour the dressing over the salad and gently toss to coat the ingredients.
Serve: Enjoy immediately, or let it sit in the fridge for 30 minutes to allow flavors to meld.

August is National Breastfeeding Month, a time to acknowledge and support the incredible journey of breastfeeding/chestfeeding! Breastfeeding is not only a way to nourish infants, but it also significantly impacts the nutritional needs of nursing parents.

Nursing parents need a well-balanced diet, ensuring they're getting enough essential macronutrients, vitamins, and minerals. On average, they need 300-500 extra calories per day while breastfeeding. Key nutrients that increase in need include:

🌞 As the summer heat intensifies, it's the perfect time to explore some delicious and refreshing healthy treats. Our latest blog post highlights options that will keep you hydrated, satisfied, and even help combat inflammation.

Watermelon Agua Fresca

Enjoy the sweet taste of watermelon in a healthy and refreshing drink, perfect as a slushy or popsicle—a treat that everyone can feel good about!

Ingredients:
4 cups seedless watermelon cubes
1/2 cup water
1/2 lime
Fresh mint
Ice

Directions:
Place watermelon and water in a blender. Blend until liquid.
Squeeze 1/2 lime into the mixture and blend again.
Add a sprig of fresh mint and serve over ice.
For a Slushy: Pour the blended drink (without the ice and mint) into a shallow pan and freeze. Scrape the frozen drink with an ice cream scoop and serve in a tall glass.

For Popsicles: Pour the blended drink (without the ice and mint) into popsicle molds and freeze.
