Just got back from vacation and two giant pickings of volunteer blackberries and tomatoes and only one green bean plant. 😍

So delicious to come home to plenty of produce in our yard. Definitely needed it after this vacation.

Sometimes you need to just change things up. This is definitely not my typical dish.

Super easy baked tofu that I just soaked with paprika, salt, pepper, cumin, onion powder, garlic powder, and liquid amino.

The lentil pancake is just soaking a cup of lentil for a few hours, drain it, and blend it up with a little bit of water, salt, pepper, paprika, cumin, two handfuls of any greens you like. Pan fry in a little bit of oil until it browns on both sides.

Dress it with whatever you’d like. I had carrots, cucumbers, arugula, mangoes, avocado, and the Trader Joe’s green goddess dressing is actually full of good ingredients.

Chop a bunch of things up and repurpose it for multiple meals.
