🌮 Recipe inspiration today comes from — and trust us, you’re going to want to try this one!

Steak Fajitas with Purple Onion, Tomato & Peppers

👩‍🍳 Ingredients (serves 3–4)
• 1 lb skirt steak (or flank steak)
• 1 medium purple onion, sliced
• 1 large tomato, chopped (or sliced into wedges if you like chunks)
• 1 red bell pepper, sliced
• 1 green bell pepper, sliced
• 2 tbsp olive oil (or avocado oil)

🌶️ Seasoning Mix (or use fajita/taco seasoning packet)
• 1 tsp chili powder
• 1 tsp smoked paprika
• 1 tsp cumin
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp oregano
• ½ tsp salt (adjust to taste)
• ¼ tsp black pepper
• Pinch of red pepper flakes (optional for spice)

🥩 Instructions
1️⃣ Marinate the Steak (optional but best)
Mix seasoning with 1 tbsp oil + lime juice. Rub onto steak, cover, and let sit at least 30 minutes (or overnight in fridge).

2️⃣ Cook Steak
Heat skillet or grill pan on medium-high with 1 tbsp oil. Cook steak 3–4 minutes per side (medium rare) or until preferred doneness. Remove, cover with foil, and let rest 5–10 minutes before slicing thin against the grain.

3️⃣ Cook Veggies
In the same pan, add onion + bell peppers + tomato. Cook until slightly charred but still tender (5–7 minutes).

4️⃣ Combine
Return sliced steak to the pan, toss with veggies to coat in flavor. Adjust seasoning.

5️⃣ Serve
With rice, guac, salsa, or tortillas/cauliflower rice for a lower-carb option.

⚠️ Disclaimer: I added veggies onto the steak vs removing — you can do this or sauté veggies then add meat. Either way, meal is superb.
