Cranberry Crumb Bars
Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup almond meal*
- 1 teaspoon baking powder
- 1 cup cold butter (2 sticks)
- 1/4 teaspoon cinnamon
- 1 tablespoon cornstarch
- 4 cups fresh cranberries
- 1 egg
- juice of 1/2 of an orange
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 2/3 cup white sugar

Preparation
Preheat the oven to 375 degrees F. Butter a 913 inch pan.In a medium bowl, mix together 1 cup sugar, flour, almond flour, salt and baking powder. Use a fork or pastry cutter to blend in the butter and egg. The dough will be crumbly. Alternatively, you can pulse the dry ingredients in a food processor with the butter until pebbly, and then mix in the egg until it all comes together. Pat half of the dough into the buttered pan.In another bowl, stir together the sugar, cornstarch, vanilla, and orange juice.

Mix in the cranberries.

Sprinkle the cranberry mixture evenly over the dough in the pan.

Add 1/4 tsp cinnamon to the remaining dough, then crumble dough over the berries.

Bake for 45-55 minutes, or until top is a light golden brown. Cool completely and chill in the refrigerator before cutting into squares. Store in an airtight container in the refrigerator.Just toss almonds in a food processor until finely ground to make almond meal.

Overnight Oatmeal
Ingredients
- 1 cup dried cranberries
- 1 cup dried figs
- 1/2 cup half-and-half
- 1 cup steel-cut oats
- 4 cups water

Preparation
In a crock-pot, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours.Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.This recipe yields 4 servings.

Carrot Oat Muffins
Ingredients
- 1/4 cup of agave nectar, I use raw and organic
- 1 cup of organic applesauce
- 3 teaspoons of baking powder
- 1 teaspoon baking soda
- 3 cups of shredded carrots
- 1 teaspoon organic cinnamon
- 3 organic eggs
- 2 teaspoons of chopped ginger
- 1/2 teaspoon salt
- 1 teaspoon of organic vanilla extract
- 2 cups of organic whole oat flour

Preparation
Combine all dry ingredients in a bowl

Combine all wet ingredients in a bowl except carrots and ginger and mix well.Gently add dry ingredients to wet ingredients and mix until just blended. Be careful not to over-mix because this will result in hard muffins.Once the wet and dry ingredients are blended, gently fold in carrots and ginger until spread throughout.Spray muffin tins with nonstick cooking spray and add mixture to 2/3 of the cup.

Bake at 350F for 20 minutes until golden brown on top.

Let cool in tins for 2-3 minutes before transferring to a cooling rack.

Bacon & Egg Bouquets
Ingredients
- 16 Pieces Turkey Bacon
- 1 ½ Cups Egg Whites (I used the whites from 10 Eggs)
- ½ Roma tomato- Diced
- ½ Avocado- Diced
- Goat Cheese
- Salt & Pepper to taste
- Fresh Basil
- Fresh Basil

Preparation
Pre-

Heat oven to 350F.

Cook bacon on oiled/cooking sprayed griddle over medium-high heat. Do NOT cook fully just a minute or two on each side. Just enough to cook but not crisp.

Remove bacon from griddle and set aside.

Spray mini muffin cups with oil/cooking spray.

Line the muffin cups with one piece of bacon each; wrapping it around completely.

In a small bowl (preferably one with a pour spout) whisk the egg whites and stir in tomato and avocado. (Or any other filler ingredients you choose)

Slowly pour egg mix into each bacon bouquet.

Top with Goat cheese crumbles.

Bake for 15 minutes or until all egg bouquets have set.

Remove and let cool slightly and plate them up.

Top with fresh basil.

Cowboy Cookies With Pretzels and Raisinettes
Ingredients
- 1 cup all purpose flour
- 1 teaspoon baking soda
- Butter
- 1/2 cup chocolate covered raisins
- 1/2 cup shredded coconut
- 2 eggs
- 1/2 cup granulated sugar
- 1 cup light brown sugar
- 1 cup light brown sugar
- 2 cups old fashioned oats
- 1 cup crumbled pretzels
- Salt to taste
- 1 cup semi-sweet chocolate chips
- 2 teaspoons vanilla extract

Preparation
Preheat oven to 350In a large bowl cream the butter and sugars.

Add the eggs and vanilla and mix until fully combined.Stir in the baking soda, salt, and flour and mix until just combined being careful not to over mix.Briefly mix in the oats.

Add the chocolate covered raisins, chocolate chips, pretzels, coconut and pecans; stir until just combined.Scoop 1 tablespoon of cookie dough onto un-greased cookie sheets about half an inch apart.

Bake for 10-12 minutes until the cookies are golden brown along the edges.

Heirloom Tomato Plate with Blue Cheese Crumbles
Ingredients
- 2 large heirloom tomatoes, sliced ¼” thick
- 1 Fugi apple, chopped in ½” chunks
- 1/8 cup pine nuts, toasted
- 1 to 2 ounces blue cheese crumbles
- ¼ cup grapeseed oil or olive oil
- 3 tablespoons balsamic vinegar
- Kosher salt to taste
- Ground black pepper to taste
- Pinch dried parsley leaves

Preparation
Lay the sliced tomatoes on a large serving plate. Toast the pine nuts in a small skillet over medium high heat until golden brown, about three minutes.

Sprinkle pine nuts on top of the tomato slices along with the hunks of apple and blue cheese crumbles. In a bowl, whisk together the oil and balsamic vinegar until well combined.

Drizzle the oil/vinegar over the tomato slices (you may have some leftover oil and vinegar, which you can use for salad dressing later).

Sprinkle salt and ground black pepper over the sliced tomatoes to taste and garnish with fresh or dried parsley.

Fresh Herb Omelette
Ingredients
- 2 eggs
- 1/4 teaspoon black pepper
- 1/8 cup green onion, chopped
- 4 cherry tomatoes
- 1 sprig of fresh basil, chopped
- 1 sprig of fresh basil, chopped
- 1/8 cup parmesan cheese, shredded
- olive oil

Preparation
Stir your eggs together in a bowl with the pepper making sure to break the yolks.

Heat a pan to medium-high and pour enough olive oil to cover the bottom of the pan.

Pour your egg into the pan. Cook for 1-2 minutes or until the egg stops bubbling and begins to solidify.

Flip the egg over and heat the other side until it is cooked through.

Place on your plate.

Add your toppings and enjoy!

Banana Brownies
Ingredients
- 1 banana
- 10 dates
- 2 eggs
- 1 tbsp coconut oil
- 1 tsp baking powder
- 15g cocoa
- 30g oat flour
- 40g dark chocolate
- 30g raspberries
- 2 tbsp dried coconut
- 2 tbsp dried coconut

Preparation
Preheat oven to 180C.In a large bowl, beat 2 eggs.Blend 1 banana and 10 dates (remove pit) until you have a very smooth and creamy texture.

Place the blended mixture into the bowl with the eggs.

Add coconut oil, baking powder, cocoa, and oat flour (simply blended oats).

Whisk it all together.Line a dish with baking paper and pour the mixture inside it.

Bake for 20 minutes.While baking, place 70% dark chocolate in a heatproof bowl over a saucepan of boiling water (be careful that the bowl does not touch the water). Stir with a spoon until melted. Leave it to cool.

Serve brownies with raspberries, melted chocolate, and a sprinkle of dried coconut.

Classic Eggs Benedict
Ingredients
- 1 package Knorr Hollandaise Sauce, prepared according to package directions (or see notes in About section for a homemade version)
- 4 Slices Canadian Bacon or ham
- 2 English Muffins
- 1/2 teaspoon white vinegar (optional)
- 4 Eggs

Preparation
Prepare Knorr Hollandaise Sauce according to package instructions.

Brown Canadian Bacon in a frying pan and toast English muffins. While bacon is cooking, poach the eggs.

Fill a medium sized sauce pan half way with water.

Add 1/2 teaspoon of white vinegar (this is optional but the vinegar helps hold the egg together). Bring to a gentle boil and carefully add eggs (1-2 at a time works best). Poach eggs for 2-3 minutes or until yolk has set to your preference.

Remove eggs one at a time with a slotted spoon.

Layer ingredients as follows: English muffin, Canadian Bacon, Eggs, Hollandaise Sauce.

Bacon Scallops
Ingredients
- 10 Bacon slices
- 20 large Sea scallops
- 1 cup Whipping cream
- 2 tablespoons Dijon mustard
- 2 tablespoons Pure maple syrup
- Snipped fresh chives

Preparation
Preheat oven to 350-degrees.

Arrange bacon slices on baking sheet.

Bake until pale golden, about 8 minutes.

Cut each slice crosswise in half. Cool.

Wrap 1 bacon piece around sides of each scallop and secure with a toothpick.

Preheat oven to 400-degrees.

Place scallops on baking sheet and bake until cooked through, about 10 minutes.

Meanwhile, boil cream in heavy large skillet until reduced to 3/4 c., about 3 minutes.

Add mustard and syrup and boil until thickened to sauce consistency, about 3 minutes. Season to taste with salt and pepper.

Remove toothpicks from scallops. Spoon sauce evenly onto 4 small plates.

Arrange scallops decoratively atop sauce.

Sprinkle with chives and serve.

Keto Broccoli Cheese Soup
Ingredients
- 2 strips bacon
- ½ onion diced
- 3 carrot sticks chopped
- 3 celery stalks chopped
- 5 garlic cloves minced
- 4 cups broccoli florets chopped
- 2 cups Bone Broth
- 2 cups heavy whipping cream
- ¼ teaspoon Himalayan pink salt
- ¼ teaspoon black pepper ground
- 3 cups sharp cheddar cheese shredded

Preparation
Dice the onion and chop the vegetables.In a large pot over medium heat, cook the bacon until brown and crispy, about 2 minutes each side.

Remove the bacon from the pot and set aside. Keep the bacon grease in the pot and add the diced onion, chopped carrots, chopped celery, and minced garlic.

Let cook for 10 minutes, stirring occasionally.Once the vegetables are tender, add the chopped broccoli, chicken bone broth, heavy whipping cream, salt and pepper to the pot. Bring to a simmer and cook for 10 minutes.Slowly stir in the cheddar cheese, allowing it to melt into the soup. Once all the cheese has been incorporated, cook for 10 minutes.While the soup simmers, roughly chop the bacon strips.Divide soup into 4 servings and garnish with bacon bits and any remaining cheese.
